The AVERAGE WHITE BAND (or AWB) came together in 1973 from various Scottish soul and jazz groups. They became one of the few white bands to achieve both success and critical acclaim playing funk. Their breakthrough release, Pick Up The Pieces, was a No.1 single in the US and a top 10 in the UK and across Europe in 1975.
AWB only played at Montreux in 1977, but that year they not only had their own concert, which forms this DVD release, but also acted as the backing group for a number of other acts. However, this headline performance was definitely one of the stand-out nights of the ‘77 Festival. It includes the hit tracks Pick Up The Pieces, Work To Do, A Love Of Your Own and Cut The Cake.
Included as a bonus feature are three tracks that it was felt could not be restored to a high enough standard to be included in the main show but which will be of interest to AWB fans: 1. IF I EVER LOSE THIS HEAVEN 2. I'M THE ONE 3. T.L.C.
The stereo & surround sound on the main show have been mixed from original multitrack tapes and approved by Arif Mardin.

In that case, pick Phoenix, Arizona; Las Vegas, Nevada; or Riverside, California, as they top the list of places projected to have the highest-percentage increase in new jobs by 2005. Most of those jobs, by the way, are expected to have above-average pay. This and other detailed information can be found in the sixth edition of Places Rated Almanac, a helpful resource for people thinking of relocating as well as those with a desire to learn about cities and towns. ACTIVE TIME: 35 minutes

TOTAL TIME: 24 hours

EASE OF PREPARATION: Moderate

1/2 cup uncooked long-grain brown rice, preferably brown basmati
2 1/2 cups whole-wheat flour, plus 3 tablespoons, divided
2 cups unbleached bread flour (see Note), plus more as needed
1/3 cup old-fashioned rolled oats
2 tablespoons toasted wheat germ
4 tablespoons roasted pepitas or sunflower seeds, divided
3 tablespoons flaxseeds, preferably golden, divided
3 tablespoons poppy seeds, divided
3 tablespoons sesame seeds, divided
2 1/4 teaspoons table salt
1 1/4 teaspoons instant, quick-rising or bread-machine yeast
2 1/2 cups ice water (see Tip), plus more as needed
3 tablespoons clover honey or other mild honey
2 tablespoons liquid egg substitute or 1 beaten egg white, for glazing

1. Mix dough: Grind rice in a blender or coffee mill (a food processor won’t work) until mostly powdery but with some fine bits remaining. Transfer to a 6-quart (or larger) bowl. Thoroughly stir in 2 1/2 cups whole-wheat flour, 2 cups bread flour, oats, wheat germ, 2 tablespoons each pepitas (or sunflower seeds), flaxseeds, poppy seeds and sesame seeds, the salt and yeast. Thoroughly whisk 2 1/2 cups ice water and honey in a medium bowl. Vigorously stir the wet ingredients into the dry ingredients, scraping down the sides and mixing just until the dough is thoroughly blended. The dough should be moist and somewhat sticky, but fairly stiff. (The seeds will absorb moisture, stiffening the dough as it stands.) If the mixture is too dry, stir in just enough additional ice water to facilitate mixing, but don’t overmoisten. If the dough is too wet, stir in just enough bread flour to stiffen slightly. Lightly coat the top with oil. Cover the bowl with plastic wrap.
2. First rise: Let the dough rise at room temperature (about 70°F) for 12 to 18 hours; if convenient, stir once partway through the rise. For convenience (and improved flavor), you may refrigerate the dough for 3 to 12 hours before starting the first rise.
3. Second rise: Generously coat a 4- to 6-quart Dutch oven (or similar ovenproof pot) with oil. Coat the bottom and sides with 2 tablespoons whole-wheat flour. Vigorously stir the dough to deflate it. If it is soft, stir in just enough flour to yield a firm but moist dough (it should be fairly hard to stir). Transfer the dough to the pot.
4. Sprinkle the remaining 1 tablespoon whole-wheat flour over the dough; pat and smooth it in. Firmly tuck the sides underneath all the way around to form a round ball of dough; dust with more flour as needed. Brush the loaf with egg substitute (or egg white) and sprinkle the remaining 2 tablespoons pepitas (or sunflower seeds) and 1 tablespoon each flaxseeds, poppy seeds and sesame seeds over the top (it will be heavily coated). Using well-oiled kitchen shears or a serrated knife, cut two 1/2-inch-deep concentric circles in the top of the loaf, one about 2 1/2 inches out from the center, the other 3 1/2 inches out. Put the lid on the pot or tightly cover with foil.
5. Let rise at warm room temperature until the dough is double the deflated size, 1 1/4 to 2 1/4 hours. (For an accelerated rise, see Tip.)
6. 20 minutes before baking: Position a rack in lower third of oven; preheat to 475°F.
7. Bake, cool, slice: Reduce oven temperature to 450°. Lightly spritz or sprinkle the loaf with water. Bake, covered, on the lower rack until the top is lightly browned, 50 to 60 minutes. Uncover and bake until a skewer inserted in the center comes out with just a few crumbs on the tip (or until an instant-read thermometer registers 204-206°), 15 to 25 minutes longer. Cool in the pot on a wire rack for 10 to 15 minutes. Turn the loaf out on the rack and let cool to at least warm before slicing.

I made two double batches of these (yes, that's 11 dozen) for St. Patrick's Day. These are definitely the best cupcakes, though they are a pain to make.

If you use a 1/4 cup measure to spoon the batter into the cups you can get exactly 5 1/2 dozen out of a double recipe. Also, I've given up trying to get the chocolate to melt just with the hot cream, I always have to use a double boiler to get all the bits to melt.

Makes 20 to 24 cupcakes

For the Guinness Chocolate Cupcakes

1 cup stout (such as Guinness)
1 cup (2 sticks) unsalted butter
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
2 cups all purpose flour
2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream

Ganache Filling (Updated to double it, based on many commenters sestions — thanks!)
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, room temperature
1 to 2 teaspoons Irish whiskey (optional)

Baileys Frosting (see Recipe Notes)
3 to 4 cups confections sugar
1 stick (1/2 cup or 4 ounces) unsalted butter, at room temperatue
3 to 4 tablespoons Baileys (or milk, or heavy cream, or a combination thereof)

Special equipment: 1-inch round cookie cutter or an apple corer and a piping bag (though a plastic bag with the corner snipped off will also work)

Make the cupcakes: Preheat oven to 350°F. Line 24 cupcake cups with liners. Bring 1 cup stout and 1 cup butter to simmer in heavy large saucepan over medium heat. Add cocoa powder and whisk until mixture is smooth. Cool slightly.

Whisk flour, sugar, baking soda, and 3/4 teaspoon salt in large bowl to blend. Using electric mixer, beat eggs and sour cream in another large bowl to blend. Add stout-chocolate mixture to egg mixture and beat just to combine. Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined. Divide batter among cupcake liners, filling them 2/3 to 3/4 of the way. Bake cake until tester inserted into center comes out clean, rotating them once front to back if your oven bakes unevenly, about 17 minutes. Cool cupcakes on a rack completely.

Make the filling: Chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, you can return it to a double-boiler to gently melt what remains. 20 seconds in the microwave, watching carefully, will also work.) Add the butter and whiskey (if you’re using it) and stir until combined.

Fill the cupcakes: Let the ganache cool until thick but still soft enough to be piped (the fridge will speed this along but you must stir it every 10 minutes). Meanwhile, using your 1-inch round cookie cutter or an apple corer, cut the centers out of the cooled cupcakes. You want to go most of the way down the cupcake but not cut through the bottom — aim for 2/3 of the way. A slim spoon or grapefruit knife will help you get the center out. Those are your “tasters”. Put the ganache into a piping bag with a wide tip and fill the holes in each cupcake to the top.

Make the frosting: Whip the butter in the bowl of an electric mixer, or with a hand mixer, for several minutes. You want to get it very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time.

[This is a fantastic trick I picked up while working on the cupcakes article for Martha Stewart Living; the test kitchen chefs had found that when they added the sugar slowly, quick buttercream frostings got less grainy, and tended to require less sugar to thicken them up.]

When the frosting looks thick enough to spread, drizzle in the Baileys (or milk) and whip it until combined. If this has made the frosting too thin (it shouldn’t, but just in case) beat in another spoonful or two of powdered sugar.

What can you do?

Air conditioners
Check and clean the air conditioner's filter once a month; make sure the air conditioning unit is the proper size for the room it is cooling; locate the air conditioner on the north or east side of a house in a shady area; ventilate the house's attic to reduce heat buildup; install ceiling fans to improve air circulation.

Dishwashers
Wash only a full load; turn off drying cycle, open door to air dry dishes.

Clothes washers and dryers
Use only with a full load; use warm or cold water, reserving hot water use only for heavily soiled clothes; use only full loads for the dryer and if a second load is necessary, dry that load immediately after the first to retain as much heat as possible; clean lint filter before each load.

Computers
Turn off computers when not in use or set the computer to energy-saving mode.

Lights
Replace incandescent bulbs with screw-in fluorescent bulbs, which use 75 percent less electricity and last at least 8 times longer; turn lights off when not needed; install light dimmers or photoelectric switches that automatically turn off lights during daylight or install timers to control use of lights; for lights used for home security, install motion detectors so lights come on only when motion is detected.
New appliances Replace aging appliances with new, more energy-efficient models when possible; look for Energy Star label designating an energy-efficient appliance.

Ovens and stove tops

glad he got passed collecting frogs and the thrill of riding scooters

always challenging himself to go beyond most others
must be because he has two older brothers
they looked at Noah as quite unique
he got involved in things they never did seek

sports photography, school paper and website design
just a few talents that are mighty fine
along with the work his brothers thought him still spoiled
even with all the things that he toiled

he kept his room a mess and clothes were everywhere
kept buying new things especially underwear
he eventually had to imporove his abilities
doing his own laundry would give him more responsibilities

high school graduation had come in June 2010
after the summer he would become a college freshman
all things went smoothly the move was done well
wanted to hear good things that time could only tell

moved in the dorm everything was set up right
has a microwave, fridge and lots of light
one other thing the school is high tech ,
everywhere you go WIFI will connect

also in the dorm as convenient as can be
is a modern laundry facility
it's free to all a dorm living dweller
included in their board fees it seems quite stellar

this is so good to have it nearby

this rather amazed me how easy it has become
i'm sure it's still hard to organize for some

this is the first time these kids are away
most never did much for themselves any day
i wasn't worried about Noah doing the laundry task
assumed all was fine didn't have to ask

then one day it was last week
he chose to share it was time to speak
he said doing the wash is really irritating as can be
i got upset and couldn't imagine what more he would tell me

thinking i would have to hire a laundress for him
just joking it was thought and said on a whim
i asked Noah to explain why it wasn't so fine
he said it's annoying you have to find an empty machine while online

Quinoa Stuffed Bell Peppers




Quinoa Stuffed Bell Peppers





I made these the other night and they were delicious. Click the picture for the recipe.

Ingredients:

2 cups of quinoa, cooked
1 small regular zucchini, chopped
1 small white zucchini, chopped
1 onion, chopped
4 bell peppers (6 if you don't want any leftover, unstuffed quinoa)
1.5 tsp cumin
1 can diced tomatoes
2 cloves garlic, minced
oregano (use your discretion)
3/4 cup cashews, chopped
salt & pepper to taste

Directions:
The timing on this one is a little tricky so I recommend doing it on a night when you just want to chill out and cook without too much effort.

1. Chop the tops off of the peppers, about a half inch from the top. Cut around the stem and throw it out, then chop the remaining pepper and set it aside. Pull out the shit in the middle of the pepper (you know, seeds and all that crap).

2a. Cook the quinoa the way you'd cook rice. I use a plastic rice steamer, appx 2 parts water to 1 part quinoa, and microwave for 15 minutes.

2b. Boil a large pot of water and submerge the pepper bowls. Cook for about 5 minutes.

2c. Preheat oven to 400 degrees Fahrenheit

3. Heat some olive oil in a skillet-type-pot and add the onion and garlic and sautee for 3 minutes. Take them out and drain them in a large colander. Set aside.

4. Add the chopped bell pepper and cumin and sautee for another 5 minutes, stirring frequently.

5. Add the tomato, zucchini, oregano, and cashes, and salt and pepper (as desired). Sautee for another 5 min or so.

6. Fold in the cooked quinoa with the heat still on. Once everything is evenly distributed, turn off the heat.

7. Grease a baking pan and set the pepper bowls in open-side up. Spoon the quinoa mixture into the bowls.

8. Loosely cover the pan with foil and put the peppers in the oven for about 20 minutes.

9. Take them out and eat them.

INGREDIENTS
1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated original biscuits (8 biscuits)
1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen broccoli, carrots, cauliflower & cheese sauce
3/4 cup diced tomatoes with roasted garlic and onion (from 14-oz can)
1/3 cup Italian-style tomato paste (from 6-oz can)
1/2 teaspoon salt
1/2 teaspoon finely chopped garlic
1/2 cup ricotta cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon parsley flakes
1 1/4 cups shredded mozzarella cheese (5 oz)

DIRECTIONS
1. Heat oven to 350°F. Separate dough into 8 biscuits. Separate 2 biscuits into 3 layers each; add 1 layer to each of remaining 6 biscuits. In ungreased jumbo muffin pan, press each biscuit on bottom and up side of muffin cup.
2. Microwave frozen vegetables as directed on bag. Pour vegetables into medium bowl; stir in tomatoes, tomato paste, salt and garlic.
3. In small bowl, mix ricotta cheese, Parmesan cheese and 1/4 teaspoon of the parsley. Spoon 1 rounded tablespoon ricotta mixture into each biscuit. Top each with 1 tablespoon mozzarella cheese and rounded 1/4 cup vegetable mixture. Sprinkle with remaining mozzarella cheese and parsley.
4. Bake 30 to 35 minutes or until biscuits are golden brown and filling is hot. Cool in pan 5 minutes. Carefully run knife around side of cups to loosen; remove from pan. Cool 10 minutes longer before serving. Serve warm.

For best results on virgin or untreated hair presoftening the hair will allow the hair colour to penetrate the hair better. All La Riche Directions colours can be mixed with each other so to create your own unique shade. Directions will take longer and faster on chemically treated hair e.g permed or bleached. Shampoo the hair with a PH acid balanced shampoo this will give the hair the correct acid balance allowing La Riche Directions Hair Colourant to achieve the best results. 2. To avoid staining of the forehead use vaseline petroleum jelly or baby oil around the hairline. As with all hair colours a swatch test is advised first. DO NOT MIX DIRECTIONS WITH PEROXIDE. DO NOT USE ON EYELASHES. DO NOT USE SHAMPOO WITH CONDITIONER INCLUDED. If more than one colour is applied the hair must be washed and dried separately greater care should be taken when partially colouring lighter hair. WARNING Due to the semi-permanent nature of La Riche Directions certain colours can sometimes leave a slight stain on materials and surfaces. Shades may vary at manufacturer's discretion. I lucked out this year - Sprouts had everything I needed to make my fruitcakes! I follow Alton Brown's recipe, from the Food Network. The only variance was that I bought dried California peaches instead of dried Turkish apricots. Just to experiment.

Alton Brown's Free-Range Fruitcake
From Good Eats

1 cup golden raisins
1 cup currants
1/2 cup sun-dried cranberries
1/2 cup sun-dried blueberries
1/2 cup sun-dried cherries
1/2 cup dried apricots, chopped
Zest of one lemon, chopped coarsely
Zest of one orange, chopped coarsely
1/4 cup candied ginger, chopped
1 cup gold rum
1 cup sugar
5 ounces unsalted butter (1 1/4 sticks)
1 cup unfiltered apple juice
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1 3/4 cups all purpose flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1 cup toasted (300 degrees for 15 min.) pecans, broken
Brandy for basting and/or spritzing

Combine dried fruits, candied ginger and both zests. Add rum and macerate overnight, or microwave for 5 minutes to re-hydrate fruit.

Place fruit and liquid in a non-reactive pot with the sugar, butter, apple juice and spices. Bring mixture to a boil, stirring often, then reduce heat and simmer for 5 to 10 minutes. Remove from heat and cool for at least 15 minutes. (Batter can be completed up to this point, then covered and refrigerated for up to 2 days. Bring to room temperature before completing cake.)

Heat oven to 325 degrees. Place a pan of hot water on the bottom shelf to prevent the crust from cracking.

Combine dry ingredients and sift into cooled fruit mixture. Quickly bring batter together with a large spoon, then stir in eggs one at a time until completely integrated, then fold in nuts. [According to an old English custom, have all the members of your family hold the spoon as the batter is stirred to bring them good luck in the New Year.] Spoon into a 10-inch non-stick loaf pan (or a bundt pan) and bake for about 1 hour. Do not open oven for first 50 minutes! Check for doneness by inserting toothpick into the middle of the cake. If it comes out clean, it's done. If not, bake another 10 minutes, and check again.

Remove cake from oven and place on cooling rack or trivet. Baste or spritz top with brandy immediately (prevents top from cracking as it cools) and allow to cool completely before turning out from pan.

When cake is completely cooled, seal in a tight sealing, food-safe container. Every 2 to 3 days, feel the cake and if dry, spritz with brandy. The cake's flavor will enhance considerably over the next two weeks. If you decide to give the cake as a gift, be sure to tell the recipient that they are very lucky indeed.

Remember why you love games? Sometimes I don't. Sometimes I forget why I so ambitiously poked and prodded my way into this industry in the first place. Then I play Jak 3 and I remember -- I remember warmth and happiness and days untouched by the all consuming hopelessness of Varmint Hunter. (I hate that game something fierce, by the way.)

Every so often a game comes around that's right and it makes me remember. It's a game that makes piles of other lesser games very, very wrong. There are precious few words that can so accurately describe this "correct" product in its entirety, but there are plenty to describe individual parts of it. Jak 3 is right, but if you dig through your lexicon you can easily break the game down into chunks of gorgeous, wonderful, fun, slick, polished, tight, balanced, well-produced, hilarious, intense, diverse, and wondrous... Buy it or die.

And if I were a smart man, I'd leave the article there and fill the rest of this page with videos of me giddily smiling and playing (it's a sort of stationary prance). Since I'm not that intelligent, here comes my winded review of choice.

As the third in a series of mascot titles, Jak 3 makes an even more radical departure from Jak 1 than Jak 2 did. Basically, there are more vehicles and there is a bigger emphasis on shooting. Before I explain how and why this is good, I feel compelled to clear the air a bit. On IGN, Jak 2 was grossly overrated. I'm sorry, but the tedium of hover driving just wasn't any good. In fact, Jak was probably regarded a touch too highly, also. All that is now spilt milk. Don't dwell on it, for whether you compare Jak 3 to its predecessors or take it as a standalone title, you're in for a phenomenal experience that must not be missed (less you welcome death at our hands). To understand this, let's first look at why the third is better than the second. Jak 2 had a real problem with pacing. Not only was it a tedious game that featured excessive use of hovercraft in Haven City, the missions weren't successively disparate enough, which made playing through a bulk of the title redundant and almost trivial. Jak 3 remedies this entirely. The first half of the game actually features little to no prerequisite world navigation. Missions come back-to-back and take moments to reach. When it is required to move to a distant point, the game will actually tack on extra missions between points A and B so that there is always something exciting to do.
After the second half of Jak 3 there are a few instances where you'll be required to revisit a scaled down version of Haven and see it from the saddle of a hover-crap-thing, but even this is infinitely more enjoyable than it was before. First of all, you don't have to worry about wretched cops. Second, the city itself is engulfed in war and eventually every street turns into a massive battlefield where it can sometimes feel like there are more combatants than buildings.

Not only do you move between missions faster than before (and over more interesting terrain), the missions themselves are also finely honed, balanced, and extremely diverse. It's not uncommon to rapidly switch between racing, time sensitive platforming, incredibly complex platforming, free-roaming action, free-roaming shooting, on-rails shooting, and freaking tobogganing. Some missions are more challenging than others and will require a few deaths to figure out, but the classic Jak instant load is in place, so getting back into things is never a big issue. Now we come to where Jak excels on its own. Simply, Jak didn't piss me off. It sounds tripe, but it's extremely important. I died a hundred times while playing through the game for this review, but I never became seriously upset and I did beat it. When I thought about this for a time, I figured something important out: I failed because I was no good.

Jak 3 offers a gamer just about everything. There are twelve interesting guns, four melee attacks, a dark Jak with melee and ranged attacks all his own, and a light Jak capable of shielding himself, flying, freezing time, and self healing. There are also a handful of different vehicles, an ever-present hover-board Marty McFly would be proud of, and a lot of stationary turrets. It's also a game with the tightest control, the smoothest framerate, the clearest indicators, and the most responsive characters. But I still couldn't win most missions the first time through. The AI is good, the levels are well designed, and death is certainly avoidable, but I'd still die a lot. Why is that?

I am talking to my girl when my fire alarm goes off. I live in an SRO because I am poor but still want to live in San Francisco. Our hotel is conected to six other's in the area, so when one guy burns his microwave popcorn in any of the hotels, the SSFD show up and this crazy stupid alarm goes off in every room.It's a recording of a guy telling me to get to the ground floor, not take the elevator, and other nonsense, then it goes to a piercing whine and repeats until the firemen come. I got mad cuz I was having sexy talk with my girl, and yell back at the recorded voice, "bitch, I'll take the elevator if I want, fuck you!!" I grab my knife, cuz it's 2:00 in the a.m., my wallet, my camera and my smokes and head on down to the main lobby, I live on the top floor, the penthouse, the fifth floor which gives me a great view of the new ugly as shit federal building, but I gotta walk down five flights of stairs past junkies, crackheads and psychos to get out. Lots of people are milling in the lobby, but I don't ask the desk clerk what is up, I am just sick of living in the hell that is 7th and mission, so I just walk out the sliding glass doors onto the street. I call my babymama, and we bullshit for a long time about our daughter, her plans on moving to sacramento, my problems with trying to get my mom some psychological help and our sex lives. I go to Carl's Jr and get a burger, and keep talking to her the whole time. If you don't know, the 24 hour carl's Jr on market and 7th is a hangout for losers, dries and homeless nutbags. What are you? an atheist?" it happens that i am not an atheist, and give out money and cigarettes to people all the time when they ask nicely. I say. "hey, if smokes are so cheap, why don't you go down the block and buy some? you aren't entitled to other people's smokes." he then tells me I look like I have aids, i say,"yes, yes I do have aids, the worst kind, you'd better move on so you don't catch it from breathing the same air as me." he becomes more aggressive and screams at me "Aids Faggot!" as loud as he can. I am a pretty cool guy so I just say, "do yourself a favor and just walk away." he decides to touch me on my shoulder, I suppose trying to incite me to fight him, not very smart as I am carrying a large knife, I just move away, and let him walk away. I try not to let things like this bother me, as I live in a shitty area and I know there are useless garbage people who think the world owes them a living and cigarettes but I am a little shaken. I just go back to what I was doing and lean against the rail at carl's jr and finish my smoke. about two minutes later, the cops roll up driving on the sidewalk, right in front of the carl's jr. where this happened, I was glad I didn't punch the guy out as I have court at the end of the month and geting arrested for a street fight would not look good. then, an older man asks me for a dollar, cuz he says he needs three more dollars for a hotel room. I tell him to wait a sec, grab a dollar out of my pocket and hand it to him, I can see the other idiot is still watching me and it gives me a lot of satisfaction knowing that he can see that I am willing to help people in need, but just not him. I drop my soda to the ground watching the guy who screamed at me, called me faggot and touched me like he thought I was afraid of him. What to make of all this? I know I just have refused to let idiots and criminals run my life, and make me afraid, I will walk where I want in the city when I want, no one is going to scare me out of getting some fast food. Do you remember when everyone ate fish on Fridays because it was the religious thing not to eat red meat once a week? Almost every town in Britain then had a high street branch of the Scottish company Macfisheries to supply the need. So great was our appetite for fresh fish, the cheapest meat of all thanks to the one time great sea fishing industry, that fishmongers were as common as butchers.

Each fish shop was open to the street so that customers could see, and smell, the artistically displayed array of fish, and game too, which glistened on sloping marble slabs. Modern health officials would blanch at the thought of such an unhygienic practice and yet we thrived on it, unlike the illness prone folk reared in a more protected environment.

Times change and still some will recall the Bristol fishmongers Bigwoods, of Baldwin Street hard by St Nicholas Fish Market, who were bought up by Macfisheries in their era of expansion. Those were the days when the Macfisheries annual diaries provided customers with a different fish or game recipe for every day of the year.

The Bigwoods branches were renamed Charles Saunders and it was in these that Chris Scott, the present Managing Director, learned his trade. Anyone who has gutted and dressed fish will recognise the skills, once practiced by legendary fish-wives, that make light work of a task many prefer to leave to others.

It was in the all important buying, storing and handling of goods which can be so easily damaged and become poisonous when past their sell by date that Chris Scott excelled. His abilities were recognised in a market where reputation is all important and rewarded by promotion until he became the Regional Manager for the company which was by then known as Macfish.

Fresh fish stored in refrigerators and displayed on layers of crushed ice was rapidly becoming replaced by convenient packs of frozen fish. These suit the modern style of living and indeed of catering, both in institutions and hotels, where boneless, skinless cuts of fish can be cooked with the minimum of time consuming preparation and no waste.

In 1983 Chris Scott bought the Charles Saunders fresh fish and retail enterprise from Macfisheries. As an independent trader with an eye to the future he put into practice a modernisation scheme which concentrated on the frozen fish side of the business.

He moved to purpose built premises in St Philips equipped with the latest cold storage facilities. The frozen fish share of the market has grown from 60% of total fish sales to around 80%, which explains why there are fewer fresh fishmongers to be found on the high streets of Britain. Those who enjoy preparing and cooking glistening pearly skinned fresh fish no longer have to catch their own, however, as it is becoming easier to obtain a range of fish to suit all palates and pockets from retailers like Charles Saunders.

Country dwellers in the not so distant past could only eat sea fish with any degree of safety if it had been salted to preserve it. This was replaced by packing fish in ice but even so any delays in delivery or cooking could lead to unhappy rural tummies. Frozen fish has changed all this so that village housewives can find, and safely stock, the more popular lines from their local shops.

It is hard to recall that many villagers relied on oil lamps and bottled gas operated cookers, and the rarer gas refrigerators, until electricity was brought to them in the years following World War II.

In an attempt to organise the studio we're currently making drawers. These are all made from materials found in the neighbourhood , snatched from some of the good skips of london or made from materials left over from other projects. Only brackets, screws, nails, glue and the shelves themselves have been bought. Oh, and two magazine boxes from Ikea (got carried away as they had planned) The shelves were bought because we were pressed for time.

When the time is right, we'll show you our very small studio, but right now it's a disaster.

All the empty bits will be filled - talk about horror vacui.
