on our long walk, we found more fresh baby nettles. leftover bread made this soup thick and crusty bread fried in leftover chicken fat made the croutons. i also put in garlic and cream to push it over the top of deliciousness. it was almost free to make. and its better than any vitamin supplement: calcium, iron, vit K!

I washed the nettles well first with tongs as to not get stung, then parboiled them in water (which i saved to make a hair rinse see below) which removes the sting. then you can use the cooked nettles to make pesto, or nettle sauce or nettle soup

nettle leaves are dense and rich in essential vitamins and minerals. This bowl provides 2,000 mg of calcium!

Last night under the moon and stars we welcomed a new farm baby into the world. Her name is "Starlight". Today Starlight & mommy (Bluebell) had a very nice day out on the pasture. Here the new little cutie was taking a nap in the sunshine getting a healthy dose of all natural vitamin D : )
