I met the erstwhile scion of Chatrapatti Shivaji Maharaj at Raigad Fort where he was the chief guest to a Rapelling event, the royal figure is the most endearing humble and a charming human personality, he shook my hands and I told him that it wasmy tryst wth destiny to shake hands that had the blood of our great Warrior King Chattrapati Shivaji running through him..
Such a huge distinguished heritage and lineage..
He invited me to his New Palace in Kolhapur but somehow I could never make it..
I have till date never forgotten him, the true spirit of Maharashtra...the state to which I belong..
Without seeing my pictures and I was not colofully dressed he said I know you shoot from the Heart..
Yes I did shoot him from the soul of my Heart..

Spent the first part of my morning out on the porch with Belle and PFC. It
was lovely, I caught up on my missed radio shows and did some knitting.
Belle was happy sitting in my lap it was lovely and very relaxing. I love
the quiet moments here, with the sun filtering through the tree, the cool
light breeze... it was wonderful.

I'm sad that I don't love this place like I thought I could. My dreams have
been filled with Oregon, fond memories, and I wake up and have to make the
best of life here. I don't want to sound ungrateful. I live in a beautiful
part of California. A big part of what's driving me to move are the
friendships that are up in Oregon. Two of my dearest friends live in the
Portland area. People who I have things in common with, who would go to the
coast, go to the mountains, go adventuring.

I am grateful for the two animals in my life, my sweet neighbor who today
shared her slow cooker stew with me... there are things I will miss here.
But I feel starting my life up there just makes more sense. For now, I
fight to get through every single week.

Bean crock (les pais au fou) can best be described as a sort of Norman cassoulet. It is a slow-cooked pork and bean stew, most authentically containing a pig's trotter water and onions. In the past the dish was so ubiquitous that English-speaking visitors, purporting to believe that the people of Jersey ate nothing else, dubbed the inhabitants Jersey beans

Cook's Cottage is the "oldest building" in Australia, located in the heritage-listed Fitzroy Gardens next to Melbourne's CBD. The structure was originally built in the village of Great Ayton in Yorkshire, England in 1755, by James and Grace Cook, parents of the famous explorer Captain James Cook.

The Cottage was purchased by Melbourne philanthropist Russell Grimwade for 800 pounds in 1933, as a centenary gift for the people of Melbourne. Although there were issues with allowing the cottage to be moved to another country, Russell Grimwade was able to convince the owner that although the cottage would be moved to another country, it would still remain as part of the Commonwealth.

To move the cottage, it had to be dismantled and then each brick numbered, put into 253 cases and 40 barrels and shipped to Melbourne, where it was rebuilt and opened to the public on 15 October 1934.

A short stop here on the way to Perth by train from Sydney over three days.

There’s only two people who live in Cook, a lonely ghost town straddling the train tracks in the middle of the Nullarbor, next door to nowhere and no-one: Jan and Ivor Holberton.

There are no roads to Cook. The only way to get here is by train. The Indian Pacific stops at Cook four times a week to change crews and take on water.

Streusel-Topped Sweet Potato Pie Squares Recipe





INGREDIENTS:

Crust

1. Pillsbury® refrigerated pie crust, softened as directed on box

Filling

3 cans (15 oz each) sweet potatoes in syrup, drained, mashed
1 can (14 oz) sweetened condensed milk (not evaporated)
3 eggs, beaten
3/4 cup half-and-half
2 teaspoons pumpkin pie spice
1/2 teaspoon salt

Topping

1/2 cup packed brown sugar
1/2 cup quick-cooking oats
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter or margarine

Garnish

1 cup heavy whipping cream
2 tablespoons powdered sugar

DIRECTIONS:

1. Heat oven to 400°F. Unroll pie crust in ungreased 13x9-inch pan. Press crust in bottom and 1/4 inch up sides of pan, cutting to fit; press seams firmly to seal. DO NOT PRICK CRUST. Bake 10 minutes. Remove from oven; immediately press bubbles down with back of wooden spoon.

2. Reduce oven temperature to 350°F. In large bowl, beat all filling ingredients with wire whisk until blended. Pour over partially baked crust.

3. Bake 40 minutes. Meanwhile, in medium bowl, mix brown sugar, oats, flour and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs.

4. Sprinkle streusel over filling. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean (surface may be puffy in spots). Cool completely on cooling rack. Refrigerate at least 2 hours before serving.

5. In chilled medium deep bowl, beat whipping cream and powdered sugar with electric mixer on high speed until soft peaks form. Cut dessert into squares; serve with whipped cream. Cover and refrigerate any remaining dessert.

Ingredients:
Topping:
* < 1/4 cup sugar
* 2 teaspoons cornstarch
* 1/3 cup cold water
* 1 1/2 cup fresh NC blueberries
* 1 teaspoon lemon juice

Crust:
* 1/4 cup margarine, melted
* 1/4 cup sugar
* 8 cinnamon graham crackers, finely crush

Filling:
* 1/4 cup cold water
* 1 envelope (7grams) unflavored gelatin
* 1 tablespoon sugar
* 2-8 ounce cartons low fat blueberry yogurt
* 1/2 cup fresh NC blueberries

Directions:
For the topping, mix cornstarch and sugar in a medium sized saucepan. Stir in cold water. Add blueberries and bring to a boil over low heat, stirring constantly. Cook until clear. Add lemon juice, stir and remove from heat. Cool at room temperature.

For the crust, mix margarine, sugar and graham crackers. Reserve 2 tablespoons crumbs. Press remaining crumbs into an 8-inch pan. Bake at 350F for 8 minutes. Let crust cool. For the filling, sprinkle gelatin over water in a 1-1/2 quart mixing bowl. Let stand 2 minutes. Microwave on high 40 seconds. Stir thoroughly, then let stand for 2 minutes or until gelatin is completely dissolved. Add sugar, mix; then add yogurt. Whisk well and chill. Blueberries will be added later.

When the crust is cool, put the pie together. Whip yogurt with an electric mixer for 2 minutes. Fold in 1/2 cup blueberries. Pour filling into crust. Chill for 1/2 hour, then spread blueberry topping over yogurt. Chill pie for 1 hour. Just before serving sprinkle reserved crumbs over pie.

And here we were having both fallen in love with the same game at the same time. And look at A. exposing his wanderful Go underwear for everybody to see. A. is playing with Francesco Marigo, 4th Dan and best Italian player at the moment. Francesco reviewed most of my games, and is responsible for most of my improvement in those days.

From this month's issue of Cook's Illustrated. It is a very old recipe, like apple pie. Except there is no bottom crust, and you carmelize the apples in a skillet before baking. I used bunny and sakura blossom cutters for some of the crust. The rest is cut into squres and pressed into the apple mixture, so the filling bubbles up around the crust.

A means to an end.

A glimpse into my other world. My desk at work, my home away from home. I spend so much time sitting here week in and week out I figured it would as good as any subject matter for a daily photo.

It has all the things your typical desk might have. The little trinkets and momentous that attempt to give character to the otherwise mundane tasks of the work week. The quest to find a balance between work and life is seemingly never ending, changing over time. Sometimes it seems to shift on a daily, even hourly basis. I am not going to lie and say my job is interesting, its not, and I struggle with that on a constant basis, but on a good day I realize it enables me to enjoy the luxuries of life outside of work. And life is pretty good away from this desk, and for that I am lucky.

The winches that once brought the whales ashore. Cheynes Beach whaling company. The whales were harpooned, dragged back to the whaling station, dragged up onto the flensing deck by the winches. Flensing is one of those wonderful Norwegian words meaning "to chop the blubber off" with extremely sharp and large instruments. Once chopped up, the whales would then be put into pressure cookers, and various products sold off for fertiliser, cosmetics or machinery lubrication oil, etc. They stopped whaling largely because of poor economics, not because of some notional higher ideal.

Dear Diary,

I still can’t believe I spend the last minutes of my days writing in this notebook. I’ve not always done it. My life was full enough without taking the time to write. There’s always so much to do. But she keeps one. One night, I asked her what she was doing. She told me I ought to start one, that future generations would appreciate knowing about life from my view.

And so here is what happened today….

She said to smile. She did everything possible to get me to smile. She swayed her body to the music coming from inside the house; made clicking noises imitating the different birds that live in the fruit trees, and called my name in her endearing accent when she spoke Tagalog.

Yet, that was all I could give. We were always told never to smile in front of the camera., that the flash would steal our soul. She must not have heard that same caution in America. America is more modern, not like us with all of our superstitions, even though we are God-fearing Catholic people. I hoped she wasn't too disappointed.

How did it happen that I have an American for a daughter-in-law? One so young, so beautiful, so kind. Jesus was blessed. Thank you, God for sending her to him. Not that my only son is ugly. After all he is a doctor and he is charming. Still, forty-one before he was married. I had almost given up hope that he would marry, and give me grandchildren.

So young, only twenty-seven. She could be his daughter.

So beautiful -- skin so white, hair almost yellow, and blue eyes. The only American here in Pililla! There are lots of them in Manila, but not here. I worry about her going out in the hot sun. Good thing she always listens and takes the umbrella with her when she goes out walking.

So kind as to agree to live here in Pililla with us. She had to leave her grandmother, mother, and younger sister. I know she’s lonely sometimes; God knows I would be if I were in her shoes.

Today was their fifth wedding anniversary. Aro, Remy, and I had not been present at their wedding in Ohio. I just kept praying that they would someday be able to come visit us here, so we could all meet her. God is so good because they came, and not just for a visit. They’ve come to live here with us. Many have met her since they arrived months ago, but a party in their honor was special. Everyone in town was invited.

We started cooking yesterday already. There were about a dozen students from the Academy who helped. Their teacher was clever. She had encouraged the girls to sign up to help. She had asked them where else could they get to experience such a gala affair. A pig and several chickens were killed. We bought several pounds of shrimp and different kinds of fish: tilapia, catfish, milkfish, not to mention the variety of vegetables: green beans, okra, eggplant, radish, carrots, spinach. The meal was served at the Academy where there was plenty of room.

The photo was taken early in the morning, before we went to church. For this occasion everyone wore new outfits. My new Maria Clara dress was made of dark blue cotton, cooler in the summer heat. The neckerchief was made of jusi, pineapple fabric-- we Pilipinos are famous for--with a scalloped design. I wore the necklace and earrings that nanay gave me for my wedding. I had worn them on many occasions. The watch was new, brought back from America. Someday these will go to my granddaughters.

We always have flowers here. When I stood by the bodega, rice storage, my pink bougainvilleas were behind me, a lovely contrast to my dress. The dark green palm plants can be seen as well.

So, I’m looking at my lovely daughter-in-law, also wearing a Maria Clara. Hers is a light blue that matches her laughing eyes. The brown camera box in her hands, hides her face, but I know her adventurous spirit. She has brought light to our lives. Her name fits her: Lucy.

this was my favorite dish at Tien Fu, a restaurant i used to go to a few times a week when i used to work in Greenway Plaza in Houston. when management changed at the restaurant, so did the recipe, but i've always wanted to recreate it at home. i think i've come close. i know what to do next time (which is use one whole onion instead of half, add green bell peppers, and add more mushrooms).

in no way am i an expert in making up a recipe. i wing it when i make stuff. it's all according to your taste, how hot you want it, etc. so what i usually do is just tell you what's in it...

2 red bell peppers - cut up in big chunks
2 green bell peppers - to be added next time (the grocery store just didn't have any that were appetizing)
2 small cans of sliced mushrooms (optional) - this wasn't in the original recipe but i love mushrooms in anything
1 whole onion - there's only 1/2 an onion here, but it needs a whole onion.
1 pound of shelled, de-veined shrimp w/ the tail
4 teaspoons of black bean garlic sauce
generous helping of honey - to taste
red pepper flakes - to taste (put more if you like it hot)
1 packet of Splenda (optional) - i actually added this last because i thought it came out too salty

since shrimp cooks really fast, i put it in last after sauteing everything else...

saute the onion in a little bit of olive oil and season with salt (to taste)... then put in the black bean garlic paste... sprinkle 2 pinches of red pepper flakes and saute some more. then put in the mushrooms and bell peppers and saute some more. add the honey. taste the sauce and see if it's hot enough or sweet enough or salty enough or garlicky enough for you. then add the shrimp. mix the shrimp until they're coated with the sauce. put the lid on it until the shrimp turns pink. should take 5 minutes or more but keep an eye on it. you don't want to overcook the shrimp or else they'll be tough & chewy. put over rice and enjoy!

btw, you can substitute the shrimp with your protein of choice: tofu, chicken, beef, pork, lamb, etc... just play with your food & you'll find something you like.

Popular in Hanoi and throughout Vietnam, Pho has a shadowy history before the late 1800's. I do enjoy a shadowy history. Even the origin of the name is debated, although a popular theory is that the name came from the French word "feu" (fire) when the French colonized the country in 1880. It is pronounced "fuh?" (with the inquisitve inflection).
Hugely popular in Vietnamese homes, noodle bars and from street vendors, there seem to be as many ways to make this National dish as places to get it. This recipe is based on one found in Jane Lawson's "The Spice Bible: Essential Information and More Than 250 Recipes", with additional influence from "Into the Vietnamese Kitchen: Treasured Foodways, Modern Flavors" by Andrea Nguyen.
I enjoyed everything about this one. Interesting new ingredients for me, super fun to assemble, pretty to look at and very, very tasty. I spent a few minutes trying to figure out why they skipped instruction on how to cook the meat until I learned that the meat is cooked when you pour the boiling broth into the bowl. How cool is that?


14 ounces rump steak
1/2 red onion
1-1/2 tablespoons fish sauce
1 star anise
1 cinnamon stick
2" piece of fresh ginger
6 cups beef stock
10-1/2 ounces fresh thin rice noodles
3 green onions, thinly sliced
4 tbsp fresh cilanto leaves
1 cup bean sprouts,
1 white onlon, sliced thin
1 small chili pepper, thinly sliced
lemon wedges, to serve

Slice the beef across the grain as thin as possible. half an hour in the freezer can make this easier.
In a large saucepan, stock, water, onion, anise, ginger, cinnamon, and fish sauce to a boil. Cover, reduce heat and simmer 20 minutes. Discard cinnamon stick, ginger and star anise.
In another pot, drop noodles in boiling water. After 3 minutes, drain and refresh in cold water.
Divide noodles between four deep bowls. Top with beef, cilantro, sprouts, onion, and chili pepper.
Return broth to boil and pour into bowls. Let rest 5 minutes (to give beef time to cook). Garnish with lemon wedge and serve with Hoisin sauce and hot chili sauce as availible condiments.

That was a good steak. Suprisingly tender for the rump. The pepper sauce had a little oomph; not too much, just right. Perfect potato (a little too much cream); salad fit nicely along with it.
Good food for a fair price.

My Dad is the King of Kitchen Gadgets, most of which quickly prove their impracticality, but he keeps buying them anyway, hoping that one will fufill its promise.

The Presto Pizza Pizzaz does.

So, when we visited Dad a few months ago and he broke out his Pizzaz to make frozen pizza and frozen french fries, Husband was fascinated by the thing, and immediately began plotting where and how to purchase one. But, he didn't have to, because Dad decided (on his own!) to give us one as a late Christmas/anniversary/whatever present (Dad aand I aren't really into pre-planned gift giving occasions). And, oh, do we like this thing. True, it doesn't really cook 'convenience foods' (as the box calls 'em) any faster than the stove oven or toaster oven, but, there's no pre-heating, so not only is the food actually ready earlier, but there's the electricity savings inherent in no pre-heating.

And the pizza above? Made from scratch and baked on the Pizzaz in about 20 minutes. We are happy. (And we're discovering how many things really do fit into the toaster oven--like, say, chicken breasts or quiche--so haven't used the stove oven for a few weeks now. We're hoping the electric bill appreciates that...)
