1. root eaten as vegetable: a long earth-colored edible root of a plant of the daisy family, which is said to have a taste resembling oysters, cooked as a vegetable.
2. European plant with edible root: a plant of the daisy family with long thin leaves and roots that are salsify. Native to: Europe.

Interesting that a simple plate of fresh vegetables with a few thin slices of cheese is considered unhealthy nowadays
