Whole Wheat Strawberry Muffins These are so delicious and very refreshing I love whole wheat and I also added 1/4 cup oats to this recipe. on the top..raw sugar and chocolate kiss dipped in sanding sugar. RECIPE: 425F/220C/ Muffin pan lined with paper Flour -2c/315g/ - I used whole wheat pastry flour plus 1/4 cup quick oats. /when using oat, use a bit less flour, just maybe 2 tbl less or so/ Baking Powder 2 tsp/ I think that`s 10grams/ Baking Soda 1/2 Tsp Salt 1/4 tsp Ground Nutmeg 1/4 tsp/ I love cinnamon but I ran out, next time I`d use cinnamon instead/ Eggs 2 Light brown sugar 2/3 cup/ packed 155grams/- I`d say it also depends on the sweetness of the fruit you are using, I used frozen strawberries..they are not too sweet, but if you were to use them in season..less sugar is good idea/ Milk 1c// I used fat free milk/250ml Unsalted butter 6 tbl/90grams/ melted Lemon zest / I tablespoon finely grated/. Whole wheat goes incredibly well with orange juice, so adding orange zest might be a good idea too. Also once zest is grated press it gently with the back of the spoon to release some oils for more flavor/ 1 cup Raspberries, blueberries, even cut up apples might be excellent, I used strawberries.just because I had them in the freezer. Stir flour-oats, baking powder, baking soda, salt, nutmeg/or other spice/ In another bowl..mix well eggs and sugar, until blended. Whisk in milk, butter and lemon zest. add wet ingredient to the dry ingredients and using rubber spatula stir just until evenly moist. Add fruit..gently fold it in, until evenly distributed. Spoon into muffin pan, 3/4 full, Bake until nicely golden on the top or till tooth pick comes out clean about 15-18 minutes. Let cool for 5 minutes in the pan. PS. before baking I sprinkled each muffing with raw sugar, nuts would be very nice too, or streusel topping Chocolate kiss has been gently brushed with corn syrup and dipped in sanding sugar. Enjoy. apple cinnamon corn muffins 1 cup all-purpose flour ? cup yellow cornmeal ? cup white sugar 2 tsp baking powder ? tsp baking soda ? teaspoon salt ? tsp cinnamon (or, to taste) 2 medium Granny Smith apples, peeled, cored, and diced 1 cup yogurt 1 tsp vanilla ? cup butter, melted and cooled 1 large egg Preheat oven to 350?F (175?C). Lightly grease 12 muffin cups or use paper liners. In a large bowl, sift together the flour, cornmeal, sugar, baking powder, salt, and cinnamon. In a separate bowl gently toss apples in ? cup of the flour mixture. Whisk yogurt, vanilla, butter, and egg together. Fold the yogurt mixture into the flour mixture until just moistened. Fold in the apples. Spoon batter into prepared muffin cups. Bake in preheated oven for 25 minutes, or until a tooth pick inserted into the center of a muffin comes out clean. Allow to cool in pan for 5 minutes, then transfer to wire rack to finish cooling. BD 1978 Datsun 620 Kingcab -01 What a clean ride this turned out to be. Datsun was hip to their market and began offering paint and trim levels in the late 70s, early 80s that were a little jazzier than the normal "fleet" look. Some years it worked, other years it didn't. This factory stripe treatment worked very well, so I had a head start on the overall look. I painted the grill black (stock was a blah grey), added the usual banner tint at the top of the windshield, smaller side mirrors. The previous owner had already added the dark bubble windows and the turbo-fan wheels. Flush mounted the side marker lights, lowered the front torsion bars a little. That air dam/fender flare set up was quite unique. The usual at the time was a air dam that ended at the edge of the bottom valance, and standard flares hanging off the sides. This one blended together giving an uninterrupted line across the entire front, I never saw another truck with that configuration. Built a bed cover out of plywood and had a local upholstery shop add color matched naughyde. The license plate was the only variation of "Radar Love" left available that made even a little sense. Still, I got asked a lot by older folks what it meant. Sky Bubbles Well not in my usual habbit of just one post per day ~ Took this one today as I was given a tube of bubbles from my partner (as a freebie from work). Tricky trying to get the detail & all components into one! This photo was achieved using my D200 and 50mm Macro set to shutter priority to allow a fast capture & sharpness of bubbles yet making sure the f-stop was low enough to gain sufficient sharpness. I focused on a piece of removable tape on a window, then focused in by a fraction to counter for the small distance between window & camera, then set my camera to high continuous shoot. The exposure comp. set to +0.7ev. Then as I blew bubbles from one hand I fired the camera with the other! ~Bloody complicated but hopefully I succeeded!? ~ Some parts of the photo you can see bits of "popped" bubbles! I love the play on words with the fox and brush alliteration. Both my grandma's had a Ewbank hand held carpet sweeper - prior to the 'vac' this was a useful household tool to help keep carpets clean - and as we grew up in Lancashire this was a local brand - Ewbank were based at Accrington and are, thankfully, still in business. The Hand Tool I tried using the little hand tool first, and wasn't too impressed with the result. I'm sure I have more to learn on how to use it though. Also information on herbs and spices (10) Five Recipes: Hummus Mess Cross-blogged: I made hummus today, from dried beans. First, I soaked them overnight in a big pot of water. Then I boiled them for a couple of hours this morning. Then I strained them, and picked out all the peels that were easy to find. Then I ground them in a small food mixer, which is visible in the photograph at right. Then I added tahini, salt, pepper, olive oil and various spices. Then I mashed the ingredients together with a potato masher. It's terrible. Ok, it's not TERRIBLE-terrible. It's edible. But I'm not going to bring this to a party and try to wow the guests with my cooking skills. And I'm not going to serve it to guests at my house and expect them to be impressed. I'll almost certainly eat it in small doses over the next few days, just so that the effort doesn't go to waste. But really, if I had known I was going to soak beans for eight hours, cook them for two hours, and spend an hour fussing with them on the kitchen counter to produce something this BLAH... ... I wouldn't have bothered. I wonder sometimes about the effort that we ask students to put into their homework, and their projects, which we then try to grade. My school has a general policy of thirty minutes or so of homework a night for middle schoolers, in each of their subjects. In general, that's about how long I expect to take cooking a meal, in terms of prepping veggies, cooking, and presenting the stuff on a plate. In general, if it takes more than 30 minutes to make a meal, I don't want to bother. Too much effort. But then I think about that in terms of homework. I'm asking kids to learn how to build a satisfying meal — of words and images, if you will — in thirty minutes. As you can see, this particular 11-hour extravaganza required quite a lot of tools and materials for a not-quite-as-good-as-I'd-hoped final result. None of my thirty-minute meals actually takes thirty minutes, when you think about it. I mean, my chicken stir-fry, which I've presented here before, has actually taken about eight hours so far — an hour of reading recipes in the Wagamama cookbook when I first chose it. And then, it's taken the prep-time of learning the recipe: going to the store, being in the store, marinating the chicken once I get it home, experimenting with the spice load in each of the ten times I've made it... and discovering today that the way I make it with chicken doesn't work AT ALL when I substitute beef for chicken. Huh? We ask kids to do a lot in that thirty minutes of homework they do for us every night when school is in session, but we tend to forget the externalities that go into the "homework recipe" — learning the grammar, learning the style, learning the reading process, learning the research process, experimenting with the adjective-noun-verb balance, and all the rest of it. The clean-up process from hummus may discourage me from making this dish again from scratch. How many of us tend to hold back from assigning projects, because we fear the mess our students will make of it, and the clean-up we'll have to do afterwards, to get them back on track? Yet the mess is part of the reality of it. I used at least fifteen different kitchen tools in the process of making this not-particularly-good hummus, and developed my ongoing relationships with a dozen different spices. The final product was not great, but haven't I learned a lot about myself as a cook? What do our students learn when we assign them complex projects? What do we learn about what they learn? And what do we all learn that we forget we learned, when we take on tasks that are larger than our usual timeframes allow? Flourless Chocolate Cake We had a houseguest this weekend who's on a gluten-free diet, and my daughter, who likes to cook with me, decided that she'd like to make them a dessert. My daughter's only requirement was that it be something that she would eat, too. After consulting a few cookbooks, she spotted the recipe for “Racine’s Cake” from David Lebovitz's “Ready for Dessert”, which is a flourless chocolate cake, and we adapted it a bit to account for what we had in the house. Photography-wise, I was trying to just use the available lighting in the kitchen, which in this case meant the halogen undercounter and hood lighting from my stove. I tried a bunch of things (bounce cards, some supplmental hand-held lighting, etc.) to try to mitigate the deep shadows I got as a result, but wasn't able to get quite what I wanted in the shot. Here's what we came up with. Ingredients 10 oz. bittersweet or semisweet chocolate, chopped 4 oz. unsalted butter 1 tbl. strong hot coffee 1/4 tsp. espresso powder 1/2 tsp. vanilla extract 1 tbl. Grand Marnier 6 large eggs, separated and at room temperature 1/4 c. plus 2 tbl. granulated sugar 1/4 c. bittersweet chocolate chips (or a mix of bittersweet and white chocolate) cocoa powder Directions Preheat your oven to 350°F. Prepare a 9" springform pan by buttering the bottom and sides, then “flouring” the pan with cocoa powder. Combine chopped chocolate, coffee, espresso powder, and butter in a double boiler and heat until smooth and well-combined. Remove from the heat, and stir in vanilla and Grand Marnier. In a large bowl, combine the egg yolks and 1/4 c. sugar, and whisk until pale yellow and creamy and forms a ribbon when running off the whisk. In another bowl, combine the egg whites and remaining sugar and beat to soft peaks. Fold the chocolate mixture into the egg yolks and combine well. Fold the egg whites in two batches into the yolk and chocolate mixture, just until there are no streaks of egg white remaining. Pour mixture into the springform pan, sprinkle the chocolate chips on top, and bake for about 25 minutes. The center will feel like it's just barely set when done. Remove from the oven and allow to cool completely before removing the pan and serving. You'll probably want to run a clean knife around the outside of the pan before removing the ring from the springform pan. HDR EFEX PRO REVIEW - Photo Big Sur, California (HDR) So I've been talking about this software for a week or so and decided I was gonna put on a cup of coffee and give it a whirl tonight. The picture above was made entirely with Nik HDR Efex Pro and Nik Plugins. Start to finish time was around 30min. It was fun, exciting, a little disappointing at times but after all is said and done it produced what I consider a solid result. Now lets get into the nitty gritty!! K So right off the bat the software is much slower than photomatix when combining images. Not really a con but just a fact. When loading a series of 3 RAW images into Efex Pro at one point CS5 completely crashed. Im not exactly sure what the cause was and it completed the merge after restarting Photoshop but at that point I figured I was in for a long night... I loaded in a bracketed series of my previous shot that was taken handheld and the +2 was quite off. Photomatix handeled it well enough so I was eager to see how NiK would match up. The outcome was not usable. I'd recommend aligning everything in PS before taking it into Nik if your source images are not shot from a tripod or a pretty steady hand. As far As Ghosting , I tried both the adaptive and global ghost reduction methods offered in the plugin and both worked well at stabilizing people moving in shots. Disappointed I couldnt do an apples to apples comparison I loaded in the shot above which was taken from a tripod in big sur. It's +2,0,-2. Nik Swallowed it without a hitch. If there's an area Im not too fond with photomatix in it's water. Now 4.0 is significantly better than 3.1 But still I find myself having to manually blend the majority of the time. The NiK software did a more than satisfactory job. Not perfect but not a ton of blown out areas or hot pixels. I was impressed. Once the photo is merged Nik has a plethera of presets. It was easy to click through them and find a fairly good starting point to begin working the image which was nice. My workflow generally starts with a somewhat realistic tonemapping and then I use multiple layers to create my final image so I chose something in that category and began moving the sliders. A cool feature Nik has included is a HDR Method Drop Down Box accompanied by a method strength slider. This allows for literally thousands of effects. I found the whole menu to be intuitive and familiar , If you've used NiK plug-ins before you'll feel right at home. So after deciding on the "Clean" method and a method strength of 38 On the slider I got into my favorite part of NiK the Upoint technology with control points. I placed control points in the sky and adjusted the MS or Method Strength slider to 70% to smooth out the sky a bit. This brings me to my first downside of the software. Being new to using Nik HDR Efex I was suprised at the amount of noise generated in the image when the source files were merged. Photomatix has a noice reduction option before you merge your files and this feature is sadly missing in NiK HDR Efex. I dont know if this happens behind the scenes or not but I noticed much more noise in the image than I do with Photomatix or Dynamic HDR. Perhaps a work-around would be opening the source files in Camera Raw before the import and manually reducing noise. I found myself also staying away from pushing for a "too textured or toned" look because of the amount of noise produced by the sliders. Once I accepted the image I hit OK and NiK rendered the image at a decent speed. Not lightning fast but decent. To create the final look you see above I used color efex for a soft focus layer, a brilliance warmth layer, I sharpened it using Sharpener Pro 3.0 and then used Dfine as my noise reduction. Its the first HDR I've ever done using all NiK software and Despite the setbacks with noise I found it to be fun and easy. Final Thoughts : I think HDR Efex Pro is a solid piece of software. It has thousands of options and they increase exponentially through the use of control points. Im not sure if it will ever be the goto piece of equipment for my workflow but it may be the tool you pull out when photomatix isn't giving you the desired look you want. Or your wanna make a textured blend layer to accompany an Image produced in photomatix. Its got a ton of bells and whistles but the two drawbacks I found were the Auto Allignment and the noticable increase in noise. Im not saying either of these are deal breakers but I guess I expected more. In the emerging world of HDR there's no such thing as having too many tools. Just like lenses to our cameras our software is as important. I think NiK's entry to the field is a welcome addition. It may not be as good as photomatix at somethings but I think it has alot more flexibility. I was nine when one of the maids caught me playing with a .45 calibre. I pointed the gun at her. She screamed and raised her arms while I laughed returning the gun back under the pillow. Why was I laughing? she asked. My uncle aimed at her young son and the devil pulled the trigger. But really who was laughing, who raised whose hands in surrender when impoverished mothers went on serving generations of their child’s murderers? What powers held us all? 3. An empty dirt road at night I was eleven when my uncle driving pulled aside, walked across beams of dust and fired three shots. I did not see anything, he told me - until the blind eye and the silence muted his assassination a year later and the killings now raised its arms in surrender before the written word. 4. My dying father who could not speak confessed his own secrets with a pen. We sat in the garden red and yellow hibiscus in full bloom. On a plastic slate over a hard sheet of carbon, he admitted killing five people. He was only seventeen the first time. Four were men. The fifth was a pregnant prostitute. whose ghost, to this day appears in a deserted road in the village where her body was dumped. 5. Six, Dad. Not five. But I did not correct him. How could I add to his guilt-wracked miscalculation all the books he read to me at night, the assurances that the world is good, that man is kind when his written confession weighed the pendulum of my becoming with the killing of the unborn child? How could I ask him why, when he raised his head his eyes fixed, glazed like fish, not with thick tears but with the paralyzed nerves of Lou Gehrig’s disease? What did he see, behind the frosted glass of remembering what story should I tell when finally he lifted the plastic slate and erased everything? 6. The words returned decades later as I pondered the relationships between rear and front sights in a shooting range where memories crouched inside me like a beast ready to leap. The .45 caliber recoils, I was warned hits the fist upwards. The palm rest the thumb cutout, the middle finger support gripped a cold, solid history of killings in the family. The nerves extended, the blood flowed. I remember laughing, reminding myself to relax to breathe, breathe deeply. I aimed at the heart licked beads of perspiration on my upper lip calculated the strength required to squeeze the trigger, the recoil of stories. You have to pull the trigger now, I reminded myself. Or was it my father over my shoulder? Now. Pull. The trigger. Now. 7. It began when I felt something heavy in my right eye. It bulged, grew and throbbed like a fat bloodsucking bug. The ophthalmologist saw specks of dark foreign material the bullet lint in the right cornea. He applied a clear sticky solution to my right eye asked me to squeeze it shut for a minute. When I opened my eyes, a tiny needle blurred the rest of my vision and marked my moment of reckoning steady fingers deftly locked in a steely battle against reflexive blinks. The advice was to fix my sight at anything, anywhere except the needle. But the left eye was stubborn. It too wanted to see. 8. I am now writing this down with my right eye patched. Fired ten shots and missed all. I thought it would be enough to serve as my final payments. I thought I could come out clean. Before I went to see the doctor I watched movies went out with friends, shopped, struggled to write cleaned my desk, replenished my garden with new plants read books – and it is amazing it is amazing that all the while, I was looking at the world so clearly with a bullet lint, with specks of gunpowder on one eye and I did not even know it. Tomorrow they will remove the bandage. I wonder how my right eye will react to the sudden light I wonder how it will look at the world and what it will see. Strange Names Eamon Cale crutches slowly over to Guin. "Ye should be resting yourself," he says softly. Guinevere Fouroux stands back for a moment, watching the children and smiling to herself. She turns, debating following Elise outside, but looks back as Eamon approaches. She eyes the crutches for a moment, then lifts her eyes to his. "Should, maybe," she says quietly. "Probably won't." She opens her mouth, so many words there, but she glances around the crowded room and shakes her head. "I hardly know what to say," she whispers. "There's so much." Eamon Cale lowers his gaze to her burned and freshly bandaged arm. Clean, he thinks. He'll never take pristine white for granted again. "If there's ever any question about divine intervention... " She searches his face, smile fading. "I can try and find Rena and Masha, if you like." Still not the right words, but the best she can do. Eamon Cale smiles, although it holds a trace of melancholy. He lifts a hand from his crutch and traces light fingertips over the butt of her gun. "Angels oft bear strange names," he says, and lifts his eyes to hers. Words spoken over another rescue, words he knows she'll understand. He searches her face for a moment more, the need to know that Masha and Rena are well warring with his need to see her go home to rest. "Aye, I want to know," he says softly. "But only if ye feel ye can. I'll try calling again as soon as I'm settled in the rectory, but if ye do, and ye find them, call me right away." Guinevere Fouroux meets his eyes, expression softening. There's no name for how she feels right now, and everything's too tangled to think clearly even if there was. "I'll see if I can find them," she whispers. "I want to know they're all right, and I know you need to. I'll call if I do." She reaches out to touch his arm, the trace of ink, and her throat closes. He's real, he's here, and the nightmare, it's over. She hesitates a moment, then leans up on her toes, to whisper something simple in his ear. Lazarus Lowenstark slings his feet over the bed, the Stitchers doing all they could do for him. "A sugar cookie will probably do...." He says, and walks past them, to his armor, and starts to load the pieces on. Eamon Cale bends his head, eyes closing in silence as he listens to her whisper. It hurts his heart, and he thinks it always will, but there's a comfort there as well, strange as it seems. He shifts his weight to his uninjured foot, his crutch tucked beneath his arm, and lifts a hand to briefly cradle the back of Guin's head. He would touch his brow to hers, and remain there for a moment, understanding and gratitude and things unspoken in that simple touch. Then he lifts his head, meets her eyes, and gets his crutch steadied once more. No words needed, he starts toward the med-den door. Soon I will plant flowers. I will paint touch-ups and fix random little things and finish unpacking the rest of the little things. I am busy. The army (in general) cleans up there places before they leave ‘m behind. Something you encounter while exploring military bases is the endless repeating buildings and rooms. The barracks where the soldiers used the live are nowadays not much more then huge buildings containing hundreds of the same spaces –all personal touches have disappeared. Exploring military locations is an adventure though...the hugeness of the bases in combination with the silence and emptiness make it a unique experience which is very hard (maybe even impossible) to capture with a camera. This military base in former East-Germany is one those big places. It’s as big as a village, was completely self containing and had it’s own airport. Entering the base was like a joke. There’s a small fence, about as high as my waste, and a sign which states that it’s prohibited to enter because it’s not safe! ;-) We walked here for hours and did not even see everything this place has to offer. It great walking around through what looks like a abandoned city and have the sun on your face, birds whistling and insects buzzing. I felt a little something heating up between my legs, this was no time to think about wargames, but my superdetector was kicking in, those hypo-allergenic moon reflexes, which had made me famous back on Colony 2522… I was renowned for having instincts of Chanchor beast… So I allowed my positronic brainwaves to relax into bad-guy mode, and let my essence drift into the room where the gangsters where, attaching my sensors to the fgure nearest the wall… I was thus able to hear quite clearly what they were saying, as well as know exactly what their own nerves were telling them… The first couple of minutes, Panic, it wasn’t that they noticed me sneaking into their nervous systems, but they were probably about to make the big deal, and someone was bound to pull a fast one on the rest of the group, and take all the loot for himself… I leaped to my feet, assisted by the low gravity of the moon… We could really move up here, almost superfast… I was quicker than average, so I got to the top of the stairs first…. Almost in a single bound.. I was the greatest and I knew it… Anyway, back to saving the day… I had no time to be cocky, it was duty and reflexes, at orgasmic intensity… I was about to take on the most powerful men on this side of the tracks, and probably get my ass shot to bits….
