New Orleans Blackened Talapia Flilets

New Orleans Blackened Talapia Flilets

I used my "new" Birmingham Stove & Range skillet to grill a few Talapia fillets, New Orleans style - blackened in a super-hot, cast iron skillet. The 10-inch cast iron skillet was a recent find at a local antique mall (paid $9). After cleaning and seasoning, it was ready for use. I'm working on accumulating a set of cast iron cookware from BS&R. They were a local company (I live in Birmingham, Alabama) founded in the 1870's. BS&R made all-things cast iron for the home.

I set up a wedding registry on Amazon but wasn't really expecting any gifts.
We actually did receive a few, which was a surprise. Neal is appreciating
this lid to a lovely piece of enameled cast iron cookware.
