serves 4 (or 2 if they are small cutlets and you're really hungry and you like it a lot)

5 slices bacon, chopped
1/4 cup flour
4 boneless, skinless chicken breast cutlets
Table salt and pepper
4 cloves garlic, sliced thin
1 Tbsp. fresh rosemary, chopped
1/8 tsp. red pepper flakes
1 cup low-sodium chicken broth
2 Tbsp. lemon juice

1. Fry bacon in large skillet over medium-high heat until crisp, about 5 minutes. Transfer bacon with slotted spoon to plate lined with paper towels. Spoon off all but 2 tablespoons bacon fat.

2. Meanwhile, place flour in shallow dish. Season chicken with salt and pepper, dredge in flour, and shake to remove excess. Add butter to reserved bacon fat in skillet and heat over high heat, swirling to melt butter. When foam subsides, reduce heat to medium-high and cook chicken until browned on both sides, 3 to 4 minutes per side. Transfer chicken to plate (leaving fat in skillet) and cover loosely with foil.

3. Reduce heat to medium and add garlic, rosemary, and pepper flakes. Cook until garlic is browned and crisp, about 2 minutes. Add broth and lemon juice, scrape up browned bits from bottom of skillet with wooden spoon, and simmer until slightly thickened, about 4 minutes.

4. Return chicken and bacon to pan and simmer, turning chicken once or twice, until sauce is thick and glossy, 2 to 3 minutes. Adjust seasonings and serve.

• green chillies 3-4
• turmeric (haldi) powder 1/4 tsp
• garam masala 1/2 tsp
• coriander(dhania)leaves 1/2 tsp
• oil 1/4 cup
• butter 2 tbsp
• tomatoes 3-4
• ginger 1/4 cup (chop)
• garlic/ginger paste 1 tbsp
• black pepper 1 tsp
• salt 1 1/2 tsp
• ketchup 1 tbsp
• yogurt 1/2 cup
• red chillies 1 tsp

Method

1. In a pan add chicken, ginger garlic paste,tomatoes cook until water dries.
2. Then add salt, red chillies, black pepper, turmeric powder, butter, oil cook until oil separates.
3. Then add (whipped) yogurt, green chillies, ketchup, tiny slices of ginger, garam masala, cook on medium heat for 3 mins.
4. Then garnish with coriander leaves and serve with raita and naan.

Its a quick recipe to make and it taste really good.

1969 "camp" on our way to Mexico

Arriving along the Pacific ocean beach late at night on our two motorcycles, we were looking for a place to camp. Out of nowhere appears this nice old lighthouse, so we set up camp (we didn't know it was a park service protected site). Next morning with our sleeping bags hung up to dry and Pete fixing broiled ham over a campfire, the park ranger showed up and asked us what we were doing. In our innocent way we said "cooking breakfast". He was a quality ranger and shook his head an laughed. He said we weren't supposed to camp here "legally" but since the deed was done, and it was obvious we kept a clean camp, he told us to finish breakfast; break camp; and then head on out. He wished us luck when we totd him our destination was Mexico.

1969 Seattle to Mexico by motorcycle. We had just graduated from W.S.U. and decided to take a "road trip" by motobike. Pete rode a comfortable Triumph Bonneville 650 and all I could afford was a Honda CB350. We both put windshields on the bikes which helped.

Along the way we slept on river sandbars; at relatives; in a lighthouse; in a fire station; on a golf course; and anywhere else we could throw our sleeping bags (no room for a tent).

When we got to Mexicali we were so sore and sunburned, that we paid to have our bikes stored in a garage. We then took an all night train ride to Matzatlan, Mexico - - where we spent a week in an inexpensive hotel on the ocean.

recipe from ted allen on queer eye for the straight guy... i'd been meaning to try it out for ages but never had muffin tins till now!

i took liberties on the recipe but here's the official one (forgot to copy down the quantities but i'm sure you can use your own discretion:

BAKED EGGS AND MUSHROOMS IN HAM CRISPS

- mushrooms, chopped
- shallots, finely chopped
- unsalted butter
- salt and pepper
- creme fraiche or sour cream (i left it out)
- ham (thinly sliced sheets will work best)
- eggs
(and of course, i used cherry tomatos, which you can too! I also grate a bit of cheddar into the bottom of the 'cups')

Preheat oven to 400c (mine doesn't go that high, so i just put it on the grill setting)
Prepare mushrooms and shallots in a frying pan with the butter, add in the creme fraiche/sour cream.
Fit one slice (I used two because they were square and didn't cover the tin completely) of ham into lightly oiled muffin tins, divide mushroom mix and crack one egg into each. Season with salt and pepper.
Bake for 15 minutes or until the egg whites are cooked, but the yolk still slightly runny.

1 cup dried lentils
1 can garbanzo beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 onion, chopped
2 garlic cloves, smashed and chopped
1/2 cup chopped celery
1/2 cup chopped carrots
28 oz can of diced tomatoes (and juice) - I used fire roasted for extra flavor
4 cups vegetable broth
1 1/2 tsp garam masala
1/2 tsp cayenne pepper
1/2 tsp cumin
1/4 tsp nutmeg
1/4 tsp cinnamon
1 inch ginger, peeled and grated


Use at least a 5 quart crockpot. Chop all veggies and put in crock. Drain and rinse off the beans, add to the pot. Add the dried lentils. Grate your ginger, and add it along with the dried spices. Stir in the vegetable broth and tomatoes.

Cover and cook on low for 8-10 hours. You can use an immersion blender to smooth out the soup if desired.

Cooking instructions. Keep in mind that there are about 3 and 3/4 cups of beans to the pound.

By the way, Carlos just spreads the beans out on a paper towel and cleans out the little dried misshapen, you know, the beans that are no good, and puts them in the pot.

He does not soak them at all. Then he just puts them in boiling water and boils them over medium heat for an hour, then sets the heat to a high simmer. Just simmer them until they are done. Probably two or three hours is okay, but we have cooked them on high in the crock pot for six hours and they are really good that way. Just add a little salt and boil. There is no need to add seasoning. You add red or green salsa and maybe some nopales and crumbled queso fresco (white whole milk cheese--not aged--almost like whey), or some crema (heavy table cream).

Peruano beans are like pinto beans, but creamy and smooth like navy beans. They have more of a pinto bean flavor than a navy bean flavor though. You only find them in mexican markets.

(sorry for the lack of measurements but I never measure when I cook creatively, I just put ingredients together)

fresh bread crumbs
ricotta cheese
oven roasted garlic cloves
parmesan
red pepper
olive oil

Take a nice crusty bread, I used chiabatta, and in a food processor make some course bread crumbs. Put into mixing bowl.

Next, add the oven roasted garlic cloves, more or less depending on how strong you want the flavor, into the food processor and pulse while adding a little olive oil, when you get a nice little paste, add to the bread crumbs in the mixing bowl.

Stir ricotta cheese into the bread crumb mixture, season with a bit of salt and mix all ingredients together, I added a bit more olive oil at this point to the mixture. Until I got a stuffing mix that would stick together nicely.

Wash mushrooms and remove stems, then stuff.

Top with grated parmesan and lightly sprinkle with red pepper.

Drizzle a little olive oil on top and cook in the oven at 350 until done.

Medium size mushrooms.

Chopped mushroom tails, ham, onion in a skillet to soften them.

Put the mix with some chopped parsley in the mushrooms and into the oven. Before they are done, add some hard cheese on top and let them into the oven for the cheese to nicely melt.

Bonus is some mushroom rice.

This week began with Bo's and my year and a half anniversary. I took him out this time (to give back for all the times he's taken me out) to a four course meal at the Melting Pot in Red Bank, the nicest restaurant I've been to yet. We had a Latin cheese fondue for appetizer; a shrimp, avocado, mango salad; lobster, filet mignon, steak, pork, chicken, shrimp, and veggies cooked in Mojo boullion; and an amaaazing chocolate fondue for dessert.

On Tuesday, my sister and I left for Orlando to spend the week vacationing with our friend from China, and we got to fly there first class thanks to our frequent flier mile elite status! We went to Epcot in Disneyworld (yes I'm almost 19 and this is my first time going to Disney), which really exceeded my expectations, then Disney's Blizzard Beach Waterpark, where I got legitimately scared of a waters slide for the first time in my life, and then Universal Studios, where we waited in the longest line I've ever seen to go on the new ride in Harry Potter World. The ride was actually REALLY cool and worth the wait, but there were WAY too many tourists and uber-fans for my taste. I prefered Dr. Seuss land. :P

Maj and I are now back in New Jersey, after being upgraded to first class AGAIN on the way home. This morning we went to check out my dad's soon to be new electric car, the Tesla Model S. Today was my one day to unpack, repack, take care of business, and hang out before I head to LA tomorrow to live with my friend Gianna who's been there for an internship this summer! This has been what I've been looking forward to most this summer and I am so excited it's here. :D On my way over I'm stopping in Las Vegas for some hours to explore (oh and guess who got upgraded to first class again, for the third time in a week??!). Can't wait!

In the past couple of months we’ve had several pot luck dinner parties featuring sexy slow cooked meats and old school comfort food. When Douglas and Kim of Living Room Events (LRE Catering) brought this pot of happiness over to the house it inspired me to write volumes. One look at the fondue and my imagination went into overdrive of times past. You know, like parties at Grannie’s house, a classic Julia-style recipe, the 70’s and the smell of Aqua Velva and cheap scotch. Let Me Count the Ways ...for FGR

I think you guys know by now that I love my son, right? I was thinking today how I notice single parents eing their love for their child more than I notice the married folk doing it. Obviously, I'm not saying married folk don't love their children. :)

I don't know, maybe there is just a special (different?) bond when you are the main person who cares for this child all the time. It's more you & them, and not sharing time and attention with someone else.

It's not always easy. I do the work of two here. The cooking, the cleaning, the carpooling, the loving, the disciplining, the working full & part time to make ends meet. But I think the hard work makes the love even stronger.

By the way, for this shot, my son was just shutting down his video game, and I asked him to come stand next to the wall. He did, no questions asked. I took a test shot to get my lighting right. Then I set the timer, stepped around and held his hand. *click* Then he went about his business like nothing ever happened. I mean, he's used to having a camera in his face b/c I've been doing it since he was born. I guess now he's just used to jumping in my shots when I need him. He's a cool kid. His b'day is coming up in September, and I'll probably start doing this pic-a-day project on him as well.

PS. I know I talked about harsh flash yesterday, but this was continuous lighting, no umbrella, just slightly off to the side of the camera. I'm trying to decide if I like the harsh shadows or not. I think I do. :) This shot is almost SOOC, just a little sharpening. It didn't need it, I don't know why I did it. But I was in a hurry this morning so I did it and uploaded it so I could move on with my day.

Pav Bhaji (Marathi: ??? ????) is a fast food dish that originated in Marathi cuisine, and is native to Maharashtra and is popular in most metropolitan areas in India, particularly in Pune.[1] Pav in Marathi means a small loaf of bread. The word has been derived from Portuguese pao (lit., "bread"). Bhaji in Marathi means vegetable dish. Pav bhaji consists of bhaji (a thick potato-based curry) garnished with coriander, chopped onion and a dash of lemon and baked pav. The pav is usually buttered on all sides.


The origin of this dish is traced to the heyday of the textile mills in Mumbai. The mill workers used to have lunch breaks too short for a full meal, and a light lunch was preferred to a heavy one, as the employees had to return to strenuous physical labor after lunch. A vendor created this dish using items or parts of other dishes available on the menu.[citation needed] Roti or rice was replaced with pav and the curries that usually go with Indian bread or rice were amalgamated into just one spicy concoction, the 'bhaji'. Initially, it remained the food of the mill-workers. With time the dish found its way into restaurants and spread over Central Mumbai and other parts of the city via the Udipi restaurants. [2][3]

Such is the popularity of this dish, that it is common to find it on the menu of most Indian restaurants serving fast food in Asia (especially Singapore, Hong Kong), America, UK (London), Switzerland and elsewhere.

The recipe for Pav bhaji varies greatly as it is essentially a fast food dish to be prepared quickly. The general procedure for making the bhaji remains the same. Potatoes are mashed on a flat griddle ( tava ), and made into a thick gravy after adding diced tomatoes, finely grilled onion, green peas and chopped capsicum (green bell pepper). Other assorted vegetables like cauliflower and carrots are added. Garlic too is added at times to spice it up. A special blend of spices simply called the pav bhaji masala is added to this thick gravy. The gravy is then allowed to simmer on the pan for a few minutes and is served hot in a flat dish with a tablespoon of butter on top.

The pav is heated on the griddle and buttered generously. The Bhaji is garnished with coriander and diced onions.

In restaurants some more varieties are available including;

Cheese Pav Bhaji, in which the bhaji had an additional garnishing of cheese
Paneer Pav Bhaji, Prepared with paneer(cottage cheese) as one of the ingredients in the bhaji along with the vegetables.
Mushroom Pav Bhaji, with mushrooms as one of the ingredients in the bhaji along with the vegetables.
Khada Pav Bhaji, ('???'). Vegetables are not mashed, but small pieces cooked with masala gravy.
Jain Pav Bhaji, replacing the potatoes with unripe bananas, as the Jains do not eat potatoes. Onion and Garlic is not added either.
Kathyawadi Pav Bhaji with buttermilk, eaten particularly in the state of Gujarat.
Dryfruit Pav Bhaji with added dry fruits.
Punjab di Pav Bhaji, eaten in parts of Punjab and Haryana. The drink of choice to go along with it is often lassi.[citation needed]


A Versatile Dish

It can be eaten as a snack or as a meal in itself. It is often eaten as an evening snack between lunch and dinner, particularly in western India. In this part, Pav bhaji is available on hand carts and at kiosks. It is also available in hotels and eateries serving fast food. In recent years, Pav bhaji is also consumed as a light evening meal, and is also a party favorite.

The Safari we did was from 8am till 11am the next day.

We got taken to the Jain Temple in the morning, then driven to a place in the desert where we got taken by 2 youngsters guides, with camels, local poor marwari people from desert villages. They get paid badly and rely on tips from travellers at the end of the Safari. The Safari costed us 3400 Rupees for 2 people. In the night also an old man joined us and cooked for us and took care of us, he was really sweet and brought 2 small children to help too. We all slept in the desert under a star studded sky, though what Shahi had promised with regards to being there on our own and nobody else was completely not true as we could see so many other groups of tourists on the dune. The old man told us he was getting 100 rupees per day to be our guide. probably another 100 for the boys.. and we were 6 people for a total of 10200 rupees, so taking off 200 or so in "salaries" the rest all goes in the pockets of the Shahi brothers who then can afford their fancy trips to London and take pictures in amsterdam and hang them in the hallway, or the even more entertaining picture of the top guy with model Helena Christensen who might have come to Shahi in the 90's.

We last ate this noodle in Clementi since 3 years ago. This is the first time we cooked since moving to Punggol 21. Somehow, udon is preferred.

These types of local yellow noodles, round or flat, are usually coated with oil; it is best to rinse them with running tap water just before cooking.

Use and purpose of alkaline water:

Alkaline water, also known as “gan sui” in Cantonese and “air abu” in Malay, is a clear solution of the salts sodium carbonate and potassium carbonate, and sometimes sodium phosphate.

Because it is often called “lye” water, it is frequently confused with lye or caustic soda, which is sodium hydroxide, a much harsher chemical that has limited culinary applications in the West.

In the Asian kitchen, alkaline water has few and specific uses. The characteristic springiness of Hong Kong style “mee” noodle is due to “gan sui”, which is added to noodle dough to firm up its texture, and give it a yellow tint.

It does the same for glutinous rice in “kee chang” (yellow alkaline glutinous rice dumplings) and in their Malay cousin, “kuih lopes”.

We last ate this noodle in Clementi since 3 years ago. This is the first time we cooked it since moving to Punggol 21. Somehow, udon is preferred.

These types of local yellow noodles, round or flat, are usually coated with oil; it is best to rinse them with running tap water just before cooking.

Use and purpose of alkaline water:

Alkaline water, also known as “gan sui” in Cantonese and “air abu” in Malay, is a clear solution of the salts sodium carbonate and potassium carbonate, and sometimes sodium phosphate.

Because it is often called “lye” water, it is frequently confused with lye or caustic soda, which is sodium hydroxide, a much harsher chemical that has limited culinary applications in the West.

In the Asian kitchen, alkaline water has few and specific uses. The characteristic springiness of Hong Kong style “mee” noodle is due to “gan sui”, which is added to noodle dough to firm up its texture, and give it a yellow tint.

It does the same for glutinous rice in “kee chang” (yellow alkaline glutinous rice dumplings) and in their Malay cousin, “kuih lopes”.

We've made these a few times now-WOW are they good. We used an imported italian lemon juice and it made them fantastic!

How to make them:

For the crust:

we used a pre-made crust that came in a roll. We rolled out flat, and used a 3" biscuit cutter with a rippled edge to cut out circles.
We tucked the circles into bignet cups but you could also use a muffin tin
Bake 400 degrees F for about 8 minutes on lower rack of oven.

Filling:
1 1/2 c. granulated sugar
1/3 c. cornstarch
1 1/2 c. water
3 egg yolks,beaten
3Tbsp. butter
4Tbsp. lemon juice (using real lemons or a good quality lemon juice is a must!)
lemon zest to taste

Mix sugar, cornstarch and water together in a saucepan. Stirring constatnly, bring to a boil. Boil for 1 minute or until thick.
Remove from heat. Spoon some of the hot mixture(about 1/4 c.) into the beaten egg yolks and mix well.
Pour egg mixture into saucepan, return to heat, boil 1 minute longer.
Remove from heat, stir in butter,lemon juice and zest.
Pour into cooled tart shells.
Let cool to room temp. and enjoy!

Note: use the reserved egg whites to make meringue and you can add it to the tarts, and bake 400 deg. F till meringue has a nice color-mini lemon meringue pies! How cute would that be!

My are are heavy and it doesn't help that I cooked onions today.

But that isn't the reason why yesterday's shot was not uploaded...I've been reading The Lost Symbol by Dan Brown. Well not today actually today I was on Pottermore. My username is WildQueen75 so add me if you got one.

I'm halfway done with the book. Probably will finish it tomorrow. It's really good. Dan Brown is always a genius at creating twist and turns and his characters never seem to lack personality. Even with a brief character you can find yourself pointing out personality traits. I had read The Da Vinci Code in high school for a english group project. Could not put the book down it was that good. There's a lot to learn from his books which is what I love about them. They are fictional but historically speaking most of the artifacts, rooms, buildings and groups are real which makes it fun. It so simple to learn something new with the books because he sets them up where what you learn is something that ties in with the main plot and the clues and figuring it out to move to the next one. So it's not one of those...heres a fact...then ignore it books. Point is to be ahead of the game. I haven't read Angels & Demons yet but I have to because I love the way the set it up in the movie. There's always some part thats really gruesome in the books. The Lost Symbol is about The Masons...while Angels & Demons is based on the Vatican and the Illuminati and The Da Vinci Code on the Priory of Sion. It's cool cause you hear about these groups and things but you never really understand a lot about them until you read more about it. I'm not saying reading Dan Brown's books validate as research but he does trow some cool facts out there and you do end up understanding more by the end of the books.

Rambling a bit aren't I! Well this is were I leave you guys. I'm going to go to bed. My eyes are killing me.

My mind was busy through the day I didn't have much time to play The little games you asked me to I didn't have much time for you, but I tried. I'd wash your clothes, I'd sew and cook, but when you'd bring your picture book And ask me please to share your fun, I'd say: "In a minute, son", but I tried. I'd tuck you in all safe at night and hear your prayers, turn out the light, Then tiptoe softly to the door... I wish I'd stayed a minute more and not rush back to work in the basement. For life is short, the years rush past...a little boy grows up so fast. No longer is he at your side, his precious secrets to confide. The picture books are put away, there are no longer games to play, hardly any good-night kisses, hardly no prayers to hear...that all belongs to yesteryear. My hands, once busy, now are busy still, the days are long and hard to fill. I wish I could go back and do the little things you asked me to. No time like the present. Right? Lets hang around town, eat at a dive a while and talk about what you love, and above all, what is on your mind to find that answer we both need.
