Low-carb bread rolls – da daaaa!
This weekend I stumbled onto a discovery – you can make low carb bread rolls with gluten flour, and they'll be nice and fluffy as long as you use plenty of baking powder.
The result is very gluten flour tasting, but if you don't mind that then you'll like these (I don't mind it). They also have a wonderful crust, and the inside is fluffly and spongy, just like you'd expect it to be. Texturally, it's kind-of similar to crumpets or Turkish bread – same sort of rubberyness – but even more rubbery than either due to the lack of starch. In fact, they're very similar to Italian Ciabatta rolls,... that's it, Ciabatta rolls! Mmmmm......
Anyway, here's how you make them:
1. preheat oven to 180?C for half an hour
2. place around 100g (maybe 125b) gluten flour into a bowl, and mix it thoroughly with a teaspoon of baking powder and some salt
3. add a teaspoon of oil, and spend a minute or two rubbing it into the flour with your fingers, so that the oil has spread evenly through the mix
4. slowly and in batches, keep adding cold water (don't know how much in total) until all of the flour has turned to dough
5. knead for a while (this is the difficult part because gluten doesn't knead easily – I just squish-n-fold it on the bench)
6. divide mixture in two, flatten out as much as you can, place on baking paper, and bake in oven for 20 minutes
7. to prevent them collapsing, slowly cool them down
Tonight I'll try adding some dietary fibre to alter their taste and consistency, and I'll report back soon.

182 Substitute - Sunshine - used a photo from 17th of June ( 1st of 7th) well wasn't sure how to pick something for the first day of July - so thought I would go with this as it says sunny summer to me :-) I was trying to use only manual setting with this one and I think that it worked out quite well :-)
Hopefully this will be my last slip up - thought about just stopping but I still want to continue with my 365 project :-)
