One large onion pan fried in olive oil until transparent and browning at the edges.
Three or four organic carrots and a large parsnip chopped and browned.
A pint of beefstock and a good dash (very big glass) of good white wine.
Three pheasant breasts sliced into thirds and leg meat stripped from the bone of two legs. (any quantity can be used but this is rich meat allow one pheasant per two adults)
An organic bouquet garni dropped in and put in a medium hot oven for 50 minutes or so. Halved chestnut mushrooms and organic frozen peas (well it is nearly November here in the UK) were added ten minutes before the cooking was finished.
We used about three breasts and two legs for a hearty family meal for two adults and two children served with good quality Campanelle egg pasta. All that was left for Bertie the Irish Setter was a slice of bread dipped in the very small amount of gravy left over in the pot. Oh, and there is still a breast and two legs in the freezer for a mixed game stew on Friday.

Dinner on the deck
We had a great meal out on the deck. David and Yvonne had a venison roast in their freezer, and they weren't sure what to do with it or how to cook it. It was also too much food for two people. So I figured out how to cook it, and it turned out better than I expected. The venison braised all day in a crock pot with onions, carrots, celery, apple cider, red wine, beef broth, rosemary, juniper berries, and probably a few other things I'm forgetting. I later whizzed up the braising liquid to make a gravy, and I added LOADS of mushrooms -- dried, wild, domestic, white, crimini, shitaakes, and more. Served with a brown rice blend from Trader Joe's (brown rice, black barley, red daikon radish seeds) with pecans and scallions. The veggie was broccoli, carrots, and snow peas steamed and then mixed with a bit of butter, lemon zest and fresh parsley. Really, very good.
