White loaf made with a poolish ferment
I've been baking bread for a few months now, and I've tried various types. I've done rye bread, sour dough, soda bread and many more. But this is my favourite. I make a massive batch (about 2.7kg of dough before shaping into loaves and baguettes) and half bake most of it for the freezer, and cook some through for now. Today I did this loaf and 10 baguettes. The loaf and one baguette are cooked through, the rest are going in the freezer. They will be finished with another 10 minutes in the oven, and used for my packed lunches.
I usually just make plain white tin loaves, but at the weekend I have more time to do more exciting and tasty bread.
