Freezer Temperature Monitoring

Temp control
The brine must be between 36 to 40 deg F. Too hot, and you start cooking the meat. Too cold and the chemical reactions stop. Here, I stuck the brine in the freezer and instrumented it up with a food thermometer to monitor the temperature after cooking the brine.
