10 eggs
1 pound ricotta cheese
1 pound mozerella
1/2 pound mild provolone
1/2 pound swiss cheese
1/2 pound boiled ham
1/2 pound Genoa salami
1/2 pound pepperoni

Heat the oven to 390 degrees.

Get a HUGE bowl. Chop up the cheese & meat.

mix eggs and ricotta in a separate bowl.

Add egg/ricotta mixture to the chopped ingrediants in the HUGE bowl.

Mix well.

Pour into 4 8 inch pie plates.

Bake until done. Could be anywhere form 1 hour to 90 minutes.

Tatses best cold!

You may substitute Egg Beaters for real eggs. Feel free to use low fat or fat free cheese and low salt stuff. It always tatses good, no matter what. Hard to screw this one up. It isn't low calorie, so we only make it once a year on Easter.

By weight, they are certainly much cheaper than buying packaged alternatives.

You get a long thin bag, put it underneath the funnel end at the bottom of the dispenser, pull the black handle down & towards you, to release a "scoop" of the contents, and keep on doing this until you've got as much as you want in the bag.

Jen (Jen's Photography) and I met up with Duane Rapp, Theresa (keleka656) and Jim (phototravel1) for the Tall Ships festival on Navy Pier. Jim took care of the wrist bands, Thank you again sir, and we spent a large portion of the day viewing and shooting the ships that were moored there.
This is one of the treats offered out at the end of the pier. It tasted just like a Dreamcicle, and was a nice way to cool down.

I liked this soup a lot with the combo of button mushrooms and oyster mushrooms. I think it would be better to have a splash of balsamic or a bit of balsamic syrup.

Mushroom and Barley Soup

6 to 8 servings

There's absolutely nothing fancy about this thick, homey, brown soup . . . except for its flavor.

Mushrooms have a natural affinity for barley; I prefer to use a mixture of shiitake and cremini mushrooms or rehydrated dried mushrooms. (The strained soaking liquid may be used to replace some of the beef stock.) For a vegetarian version, use vegetable stock rather than beef.

4 tablespoons butter

1 large onion, peeled and diced small

2 medium carrots, peeled and diced small

1 medium parsnip, peeled and diced small

1 1/2 teaspoons kosher salt, or to taste

1 pound assorted mushrooms, cleaned, stems trimmed, caps sliced into bite-size pieces

Freshly ground black pepper

2 tablespoons finely chopped fresh thyme or 1 teaspoon dried thyme

2 quarts (8 cups) beef stock (or vegetable stock), plus additional

1/2 cup pearled barley

1/4 cup dry sherry (optional)

Chopped flat-leaf parsley for garnish

In a large heavy pot over medium heat, melt the butter. Add the onion, carrots, parsnip and salt and cook, stirring frequently, until the onion is softened, about 10 minutes.

Add the mushrooms and continue to cook, stirring only occasionally, until all the mushrooms are tender, about 15 minutes more, adding more butter if necessary. Season with pepper and thyme and stir to combine. Add the stock, sherry if desired, and barley, increase the heat to medium-high and bring almost to a boil. Reduce the heat to medium-low, cover partially and simmer gently until the barley is completely cooked and tender, about 1 hour. Check the liquid level during simmering; if a thinner consistency is desired, add additional stock. (May keep warm over low heat, stirring occasionally, for up to a couple of hours, or you may cover and refrigerate overnight and rewarm over low heat.)

To serve, garnish with parsley.

Per serving (based on 8): 189 calories, 7 gm protein, 23 gm carbohydrates, 9 gm fat, 21 mg cholesterol, 5 gm saturated fat, 589 mg sodium, 5 gm dietary fiber

These guys (Mahurangi Oysters) are selling their gorgeous fresh oysters at the farmers market that I go to on a Saturday morning - before my "health kick" I would have bought french pastries, some paella and lots of gorgeous yummy cheeses.....

Now I buy lots of green crunchy stuff - Salsa Roja and plump fresh oysters - life is good!!

These ones have a combination french, mexican kick to them..... Chopped shallots in French White Wine Vinegar & Balamic Vinegar mix - with a dollop of Mexican Salsa Roja - OMG - they are so good :-) And really low in calories - but high in all sorts of wonderfull nutrients...

I'm not sure if this is technically a frittata or not. I started out with a Cooking Light quiche recipe, realized I didn't have half of the ingredients needed, and this is what I ended up with.

I've also decided that I need to start cooking before 10pm so I can get natural light because my kitchen flourescents do nothing for this image.

Serves 6

1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 clove garlic
2 tablespoons minced shallots
1 teaspoon dill
dash of freshly grated nutmeg
1/2 cup cream
1/2 cup buttermilk
1/4 teaspoon salt
1/8 teaspoon pepper
2 large egg whites
2 large eggs
3/4 cup Caramelized Onions (about 3 cups uncooked)
1/3 cup italian sausage (175g)
1/4 cup (1 ounce) shredded mozzarella and cheddar cheese

Combine the dill, nutmeg, garlic, spinach and shallots in a small bowl. Combine the cream and buttermilk, salt, pepper, egg whites, and eggs in a medium bowl, and stir well with a whisk. Stir 1/2 milk mixture into spinach mixture. Spoon the spinach mixture into bottom of pan.
Add caramelized onions, and top with sausage and cheese. Pour the remaining milk mixture over cheese.
Place pie plate on a baking sheet, and bake at 350° for 45 minutes or until set. Let stand 10 minutes.

2 cups egg whites
1/2 cup nonfat cottage cheese
1/2 cup chopped tomatoes
1/2 cup chopped red or green sweet pepper
1/2 cup chopped sweet onion - Vidalia or purple
1/2 cup black beans, rinsed and well drained then mashed coarsely with a fork
4 small Ezekiel grain or other whole-grain tortillas or wraps
Sea salt and fresh ground black pepper to taste
Cooking spray

1 Preheat oven to 250 F. Place tortillas or wraps in oven to warm while preparing remaining ingredients

2 In a small bowl whisk egg whites, cottage cheese, salt and pepper.

3 In a medium skillet coated with cooking spray, saute vegetables and beans until soft. Pour the egg/cottage cheese mixture over vegetables and cook until mixture sets. Once firm, divide egg mixture among the warmed tortillas. Roll each into a burrito. Garnish with low-fat, low-sodium salsa.

Not a great week for weight loss, but strangely not a bad one either. Another week where I was more or less flat. But this week it was pretty much due to a lack of exercise. Other than Monday, every night conspired to leave me no time for biking either on the stationary bike or outdoors. The week looked like a write-off entirely until today when after several days of weight increase, I suddenly ended back towards my low.

This weekend, we are taking the teen Bible Quiz Team to Lancaster, PA for the final meet of the year (Districts). I am taking this weekend as a "free weekend" where I can eat what I want (within reason, still no sugar). So I will likely be way up on Monday, but these weekends usually come off as quickly as they go on, if I return to the diet plan and get back onto the bike. We'll see how it goes.

Missouri City Fire & Rescue Service honored our firefighters' selfless service to others, bravery in the line of duty and physical fitness during the 2010 Awards Presentation dinner.

During the recent ceremony, Chief Russell Sander saluted the City's crews for their hard work and dedication and recognized the exemplary service of the honorees.

Peter Ondrusko earned the Rookie of the Year award for his ability to "get the job done completely, competently and correctly, while working well with others, and serving as a positive role model," Sander said. "Peter joined the Department in May of 2009 and became known as a person who supports the team and for his positive, 'can-do' attitude. He became very active in the Department's Recruitment Committee, making several presentations at fire academies, while representing the Department and the City with a positive and energetic attitude."

Frank Luu earned the Firefighter of the Year award because "the amount of work he produced over the past year exceeds expectations," Sander said. "Frank is able to maintain his focus on the job at hand and produces consistent work. Moreover, he is actively involved in the Fire House Clown Program, the Department's Honor Guard, and has represented the department in several events over the past year." Luu was also commended for obtaining his Paramedic and Advanced Diver Certifications during the past year.

Lt. Sam Scott earned the Officer of the Year award, "recognizing him not only for his duties as an officer, but for his dedication in maintaining the Department's Self Contained Breathing Apparatus and his passion for training," Sander said. "He always strives to make the people around him better. If there is something that can be learned from an incident scene, Lieutenant Scott will find it, dissect it, and provide information to those around him."

I got the Moroccan, Lamb Spinach and Pinenut, and Chicken, asparagus and corn, sausages from David Jones Food Hall in Melbourne. They tasted quite good, but I remember them being more chunky and less processed. They are better quality than most "thin" sausages, higher meat content and less fatty.

Circuit bending es la manera creativa de hacer corto circuitos en aparatos electricos de bajo voltaje (como juguetes para ninos) para crear nuevos instrumentos musicales o generadores de sonido. Enfatizando la espontaneidad y la aleatoriedad el circuit bending ha sido asociado comunmente con la musica NOISE, aunque esta tecnica se ha usado en contextos diversos.

Basicamente esta tecnica consiste en conectar los diferentes componentes electronicos de un aparato entre si de formas que no fueron pensadas en su diseno original, de modo que resulten en comportamientos extranos que puedan llegar a ser interesantes sonoramente. La manera mas facil de hacer esto es con la ayuda de “caimanes” , que son pares de pinzas sujetadoras unidas por un cable. Fijando uno de los extremos del caiman a un componente se pueden buscar diferentes puntos de contacto con el otro extremo del caiman observando los resultados.

El termino circuit bending fue acunado por Reed Ghazala en los anos 60?s siendo el uno de los pioneros en esta tecnica.

El taller consiste en una conversacion acerca de la teoria basica para hacer un circuit bending y los materiales que se ocupan.

Luego se hara un taller practico donde se intervendran juguetes, cada participante debe llevar un juguete que emita sonidos y a pila para intervenir.

Materiales requeridos:
•Juguete a pila en desuso que tengan sonidos de cualquier tipo (teclados, pianitos, munecas, pistolas, guitarras, figuritas, juguetes de bebe, etc.)
•1 metro de cable delgado de red UTP o telefono.
•Alicate cortante, destornilladores de punta y cruz. (chicos)
•Soldador electrico 30 watts, estano, cinta aislante. (se consigue en cualquier ferreteria).
•Taladro o Dremel.
Convoca: Matucana 100, Sudamerica Experimental y Productora Mutante.

Haciendo unas pruebas en el Circuit de Catalunya con velocidades de obturacion bajas, del orden de 1/100, 1/80 y 1/60, a pulso y sin estabilizador.
Falta foco y definicion en la mitad del coche, la velocidad podria ser mucho mas reducida, y tiene muchas zonas quemadas, pero me gusta en general por la sensacion de velocidad y por lo que me costo ejecutar esta foto sobretodo, ademas de por el angulo de imagen, que ayuda a reforzar ese ideal de sensacion de velocidadad.
