Fingal Head was first sighted by James Cook about 17:15 EST 15–16 May 1770 (log date). The area and small town is often just called Fingal. It is located on the Far North Coast of New South Wales in Tweed Shire, about 5 km south of the New South Wales and Queensland border, and south of the Gold Coast.
The headland itself was made form the magma flow from the extinct volcano, Mount Warning. There are walking tracks all over this area. About 500 metres offshore from the headland is Cook Island, a rocky uninhabited island first charted by James Cook in 1770. The stretch of water to the island is called the "Giants Causeway". Cook Island was made a marine reserve in 1998.
Fishing is prohibited in the waters nearby.
There has been controversy over the naming of Fingal Head by James Cook in May 1770 for many years. Strong evidence suggests that Fingal Head was in fact; the point, James Cook named Point Danger.

Plenty of traffic here on a Saturday night it seems, and the inevitable happened - I was spotted running about with my fluro light rig. Thus my suspicions were confirmed, and I got some funny looks.
As I was leaving, a fisherman said "G'day" to me about four times... quite odd, really.

Norie's Kitchen - Angry Birds 10 - details
The Angry Birds cake has reached double digit mark. To date this is the only cake aside from Plants vs Zombies to reach the double digit mark.
Which I'd like to thank Triccia (she was one of my early clients when I was just doing cookies before) and Noel for getting Andrei's birthday cake from Norie's Kitchen. This was the cake that we delivered last Saturday at Sofitel Manila and by looking at their party pictures it looked like they enjoyed the cake.

My grandma used to make the basic French meringue - just egg whites and sugar - almost every week as I was growing up. It was easy to get spoiled by these sweet airy puffs. ~116~ Easy chicken curry
A while ago Chawne posted about the vegetables she needed to use up from her veg box and I suggested a quick chicken curry to use it all up. When we found some frozen roti at the back of the freezer that we wanted to use up I remembered that we hadn't made this in a while and it turned out to be perfect for a weeknight meal.
Here's a quick version of the recipe:
Saute up some curry powder (or turmeric if you want it non-spicy) in vegetable oil in a large pan and then saute the onion (cut into slices) until softened, add chicken (can be strips or drumsticks, seasoned with salt/pepper first) and brown lightly, then add potatoes (starchier potato rather than waxy is better), carrots and mushrooms (cut to size as desired) and mix well, sauteing for a few minutes. Add chicken broth to cover and let simmer, covered for about 30-45 mins until vegetables are done and sauce has reduced down to desired consistency for curry, season to taste.

Chicken Curry
Grind the following to a fine paste:
one onion, one tomato, 2 cloves garlic
Dry roast the following and grind into a fine powder:
4 long dry red chillies, 1" cinnamon, 4 green cardamoms, 1 tsp cumin seeds, 1 tbsp corriander seeds, 1 tbsp fennel seeds, 4 cloves, 1tbsp whole black pepper.
Heat 3 tbsp olive oil and add 1" finely chopped ginger and fry for 10 seconds. Add the paste and fry for 30 minutes on low heat. Stir occassionally. Add the spice powder and stir well. Add 500gm chicken and fry for 5 min. Add 2 cups water and one cubed potato and cook until done. Serve with rice or naan bread.

ketchup
Ketchup (a loosely based recipe on many others)
5 pounds of tomatoes
3 celery stems, chopped
2 onions, chopped
1 bell pepper, chopped roughly
1 cup sugar
2 tablespoons dry mustard or seeds
1 tablespoon ground allspice
1 tablespoon ground cinnamon
2 cups cider vinegar
3 tablespoons salt
1 tablespoon black pepper
1 teaspoon ground cloves
1/4 cup pomegranate molasses
Feel free to add cinnamon sticks, mace, cayenne or Piri Piri pepper, celery salt, chopped carrots, what ever strikes your fancy because I did. I had a leftover jar of carrot relish and it's juice so I added that as well. Good additions would be: horse radish, curry, cilantro, the sky is the limit.
Make an X across the tops of each tomato. Scald in boiling hot water for a minute, then drop into cold water; now the peels come off easily. Cut out the hard stem tops. Let simmer slowly for 3 hours with the other ingredients (or for an hour in a pressure cooker) Pushed it all through a ricer or food mill to make it fine and then return it back to the pan to cook again until it is thick and rich. Pour into hot sterilized 1-pint jars or these cool beer steins and seal. Process for 15 minutes in pressure canner.
Ta da!
Canning ketchup isn't "canning" in the same way that you can beans, corn, etc.; you don't have to put the cans in the pressure cooker to get a seal. We just fill the jars, boil the tops and seals in a little pan of water, then screw them on... and ta-da! We have beautiful ketchup! (It tastes pretty amazing too, if I do say so myself.)

These tarts were absolutely delicious! I don't know what you could use in place of the Key Lime Cooler cookies (Nilla Wafers would be too large for the mini muffin tin). Here is the recipe:
Key Lime Tarts – Paula Deen
24 Key Lime Cooler cookies
8 ounces cream cheese, softened
1 egg
1/2 cup sugar
2 tablespoons lime juice, preferably Key lime
1 teaspoon lime zest
Fresh sweetened whipped cream
Mint leaves or lime zest, for garnish
Preheat oven to 350 degrees F.
Fill 2 (12-muffin) mini muffin tins with paper cups and spray cups with cooking spray. Place 1 Key Lime Cooler cookie in the bottom of the cup, flat side down.
Prepare filling. Beat together cream cheese, egg, sugar, lime juice, and zest until well mixed. Fill the cups to the top. Bake for 10 to 12 minutes. Remove tarts to cool. When completely cool, fit a star tip in a pastry bag and fill with the whipped cream. Pipe the whipped cream on top of the tarts. Garnish with tiny mint leaves or lime zest.

Fold in slivered almonds. Refrigerate 1 hour.

1/20 Nitto SF3D Original Neuspotter
A good friend built this years ago and never got around weathering it, but he knew how much I liked it and gave it to me. This is a 'SF3D Original' issue of Kow Yokoyama's sci-fi model series, now known as "Ma.K. ZbV3000". I have several of these model kits, in 1/20, 1/35, and even 1/76 scale. A couple of which I am scratchbuilding. The two smaller models are 1/35 scale, pre-painted with moveable limbs. In the background you can see one a Oaxacan clay sculpture from Mexico's Day of the Dead celebration.
Nebulosa Trífida - Messier 20 - 3ş Procesado
The Trifid Nebula (Messier 20), taken with a Canon Hutech 40D camera, an IDAS LPS-V3 Filter and a Meade LX50 Telescope. It was made of 11 shots of 5 minutes each at ISO800. Bias, darks, flats and dark flats were also made. Seeing was about 3/5, transparency 4/5 y and ambient temp. was freezing at about -1?C.

Florentine Lace Cookies
Recipe coming up:
2/3 cup vegetable margarine
2 cup quick oats, uncooked
1 cup raw sugar
2/3 cup flour
1/4 cup corn syrup
1/4 cup soy milk
1 tsp vanilla
1/4 tsp salt
2 cups carob chips
Cookies: Preheat oven to 375 degrees. Melt margarine in saucepan. Remove from heat; stir in oats, sugar, flour, corn syrup, milk, vanilla extract, and salt; mix well. Drop by a teaspoonful, onto foil-lined cookie sheets or a silpat. Spread thin with rubber spatula. Bake 5 to 7 minutes. Let cool. Peel foil away from cookies.
Filling: Melt over hot water—a little soy milk, and carob chips- stir until smooth. Spread chocolate on the flat side of each half of the cookies. Top with a remaining cookie.
