My oldest love's fried chicken. I was on a quest to make her the perfect fried chicken to her and the rest of my families liking.

This is a combinationof 3 differant recipe's i found.Took what we liked out of the 3 recipes and combined them into one GREAT chicken recipe.I then went about the task of making it a little bit healthier for us and substituted whole wheat pastry flour for the white flour,Egg beater's for the egg's,bad artery clogging oil for a healthier choice with out loosing the flavor.And TA DA!! We have a lower fat, heathier choice that even my Mom can eat & she has heart problem's.

This does have bit of spice to it but we LOVE it this way.You can always omit the cayenne pepper &/or the hot red pepper sauce if you like.

Another great trick i learned is instead of frying the chicken untill it is done..Is to fry untill it is lightly browned then place it in the oven.Put a meat rack in your pan then place the chicken on it so that the fat drips off your chicken and not back into it.Work's out great, & no one will never know you did not "deep fry" it :)


Recipe:

1-1/2 cups Whole Wheat pastry flour
2-1/4 teaspoons garlic powder
1-1/2 teaspoons ground black pepper
1-1/2 teaspoons paprika
1 1/4 teaspoon Celery salt
1 1/2 teaspoon Seasoning Salt
1 1/4 teaspoon Onion powder
1/8 teaspoon cayenne pepper
1/4 teaspoon poultry seasoning

2/3 cup whole wheat pastry flour
1/2 teaspoon salt substitute( i use no salt)
1/8 teaspoon ground black pepper
1/2 Cup egg beater's
3/4 Cup Miller light (beer)
1/3 Cup hot red pepper sauce or to taste(optional,but we love this addition)

2 cups vegetable or peanut oil oil for frying
4 Boneless (skinless) chicken breast

In one medium bowl, mix together flour, onion powder,celery salt,garlic powder,black pepper, paprika,cayenne pepper and poultry seasoning. In a separate bowl, stir together 1 1/3 cups flour, salt, 1/4 teaspoon pepper, egg beaters,hot red pepper sauce and beer. You may need to thin with additional beer if the batter is too thick. If it is to thin add 1 tablespoon more flour untill it reaches the desired consistency.

Heat the oil in a deep-fryer or deep skillet to 350 degrees F (175 degrees C). Moisten each piece of chicken with a little water, then dip in the dry mix. Shake off excess and dip in the wet mix, then dip in the dry mix once more.

Carefully place the chicken pieces in the hot oil. Fry for 15 to 18 minutes, or until well browned. Smaller pieces will not take as long. Large pieces may take longer. Serves four.

Remove and drain on paper towels before serving. This makes a great "picnic chicken" or just a great fried chicken for dinner :)

10 eggs
1 pound ricotta
1/2 pound Genoa salami
1/2 pound pepperoni
1/2 pound boiled ham
1 pound mozzerella
1/2 pound mild provolone
1/2 pound swiss cheese

You can use egg beaters instead of real eggs or a combo of real and egg beaters. You can use low salt and low fat or fat free cheese. I have done it every kind of way and even made a vegetarian version using soy salami, soy ham and soy pepperoni. It all tastes good.

As you can tell, this is NOT a low fat recipe. That is why we only make it once a year~Easter. The actual recipe calls for this to be baked in a pie crust. I don't happen to like pie crust and I figure you can really cut a lot of calories there, so I just bake it in aluminum pans, without the crust and it tastes great anyway!
