Mini Lime Pies with Glazed Berries

The texture spectrum of these pies is just as bold as their appearance: A crisp, flaky layered crust gives way to lush, creamy lime curd and juicy glazed berries.
Makes 6 servings.
ingredients
For lime curd
3 large eggs
3/4 cup granulated sugar
1/2 cup fresh lime juice
3/4 stick (6 tablespoons) unsalted butter, cut into 1/2-inch cubes
1 teaspoon finely grated fresh lime zest
For pastry rounds
Pastry dough for a single-crust pie
3 tablespoons superfine granulated sugar
For glazed berries
1/4 cup confectioners sugar
1/4 cup water
1 tablespoon fresh lime juice
3 cups mixed raspberries, blackberries, and blueberries
Special equipment: 2 large (17- by 12-inch) baking sheets; parchment paper; a 3-inch round cookie cutter; a small blowtorch
preparation
Make lime curd: Whisk together eggs, sugar, and lime juice in a 2-quart heavy saucepan until combined. Add butter and cook over moderately low heat, whisking constantly, until curd is thick enough to hold marks of the whisk and first bubbles appear on surface, 8 to 10 minutes. Immediately pour through a fine-mesh sieve into a bowl, discarding solids. Cool to room temperature, stirring occasionally. Stir in zest, then chill, covered, at least 1 hour.
Make pastry rounds: Put oven rack in middle position and preheat oven to 350°F.
Line 1 baking sheet with parchment paper.
Roll out dough into a 15-inch round (pastry will be thin) on a lightly floured surface with a lightly floured rolling pin. Cut out 18 rounds with cookie cutter and arrange 1/2 inch apart on lined baking sheet. Prick each round several times with a fork, then cover rounds with another sheet of parchment and weight with second baking sheet.
Bake until rounds are pale golden, 15 to 20 minutes. Remove top baking sheet and parchment and transfer rounds to racks to cool.
Sprinkle each round evenly with 1/2 teaspoon superfine sugar and carefully caramelize with a blowtorch (sugar burns easily).
Make glazed fruit and assemble desserts: Boil confectioners sugar, water, and lime juice in a 12-inch heavy skillet over moderate heat, stirring occasionally, until slightly thickened, about 2 minutes.
Remove from heat and add berries, gently tossing to coat. (There will be just enough to glaze berries; they will give off a small amount of juice as they cool.)
Cool berries 5 minutes.
Put 1 tablespoon of curd on each of 6 plates. Stack 3 rounds on each plate, layering rounds with some of curd and glazed berries, then drizzle plates with some syrup.
Cooks' notes:

Beef Empanadas
Serves 10 people
Ingredients
For Empanada Dough
4 cups flour
1 ? cup masa harina
1 ? Tablespoon salt
? pound cold butter
2 Tablespoon sugar
2 cup cold water
3 eggs for egg wash
For filling
1 ? pound ground beef
2 Tablespoons olive oil
1 onion, minced
3 cloves garlic, minced
2 Tablespoons fresh oregano, chopped
5 medium boiled eggs, cut in quarters
? cup currants, simmered in warm water until plump
Assortment of spices (cumin, coriander)
Green olives
Juice from 2 limes
salt and pepper to taste
For tomato sauce
2 cups tomato concasse (or canned tomatoes)
2 Tablespoons onions, minced
1 Tablespoon garlic, minced
2 Tablespoons olive oils
To Garnish
Chopped fresh oregano
Special Equipment
Fry pot, oil and basket or spider
Rolling pin
Stick blender
Biscuit cutters
Pastry brush
Instructions
For Empanada Dough
Combine the dry ingredients in a mixing bowl. Blend in the cold butter using 2 forks until the mixture resembles corn meal (don’t use your fingers because they will melt the butter) . Mix in the water and use your hands to work into a smooth dough. Place in a bowl and cover with a towel. Rest for approximately half an hour, while you prepare the filling and sauce.
For the sauce
Saute the garlic and onions in the olive oil until soft. Add the tomatoes and simmer for 20 minutes over low heat. Process in a blender or food processer until smooth, and season with salt and pepper.
For the filling
Saute the garlic and onions in the olive oil. Add the ground beef and cook until done. Drain the excess grease and discard. Mix in the plumped currants, assorted spices, green olives and lime juice.
To Form the empanadas, roll out the dough to a ?” thick sheet and cut circles out of dough. Brush half of the circles edge with the egg wash and place filling on half of the circle along with one or two pieces of egg. Fold over and seal well with a fork. Deep fry at 365 degrees until golden brown.
To Serve
Serve empanadas warm with tomato sauce.

This sanctuary built in Macquarie Harbour's landmark Port Arthur penal colony by convicts was finished in 1837 and destroyed by fire in 1884. It held 1000 convicts and 200 guards. Port Arthur was intended to be a model prison, incorporating Jeremy Bentham’s theories and the panopticon model.

Thousands, while they venerate the land of their European ancestors, with an amiable fondness love Tasmania as their native country. They will, hereafter, guide its affairs, extend its commerce, and defend its soil; and, not inferior in virtue and intelligence, they will fill an important position in the vast system of Australasia.

This study reports the characterization of [^1^3C"1"4]-decabromodiphenylethane and the use of this surrogate standard to positively identify and quantify the presence of DBDPE in sewage sludge samples. The large difference in response factors between BDE-209 and DBDPE predicates the use of [^1^3C"1"4]-decabromodiphenylethane as a surrogate standard to improve the accuracy when determining the levels of DBDPE in environmental samples.

The total level of imports and exports on a worldwide basis, and those for Canada in particular, is estimated using a model which aggregates across over 150 key country markets and projects these to the current year. From there, each country represents a percent of the world market. This market is served from a number of competitive countries of origin. Based on both demand- and supply-side dynamics, market shares by country of origin are then calculated across each country market destination. These shares lead to a volume of import and export values for each country and are aggregated to regional and world totals. In doing so, we are able to obtain maximum likelihood estimates of both the value of each market and the share that Canada is likely to receive this year. From these figures, rankings are calculated to allow managers to prioritize Canada compared to other major country markets. In this way, all the figures provided in this report are forecasts that can be combined with internal information sources for strategic planning purposes.

Brent's Grist Mill consists of a grist mill and two associated buildings; Brent's residence and a dairy barn. The three buildings are located on a large site at the northwest corner of Dilworth Drive and Leckie Place, adjacent to Mill Creek and the Canadian National Railway right-of-way. The buildings were relocated here in 2002, and were sited to retain their original orientation to one another, including their location along Mill Creek. The buildings are in the process of being restored by the Central Okanagan Heritage Society.
Heritage Value:
Brent's Grist Mill is of heritage value as an excellent and rare surviving example of pioneering agricultural and production practices in Kelowna. It was one of the first industrial enterprises in the Okanagan Valley and is the oldest surviving purpose-built grist mill building in B.C.
Frederick Brent faced many challenges in establishing his milling operation. He had to travel to San Francisco to buy his equipment, then move it by sailing ship, train, freight wagon, lake and river steamers, row boat along Okanagan Lake and, for the last 6.5 kilometres, by horse-drawn sledge, illustrating the challenges faced by early settlers at a time when this area was remote and transportation was difficult. At the end of each season, the millstones had to be dressed with steel picks, which until 1885 had to be sent to San Francisco for sharpening. The mill was an immediate success, and settlers and local natives from throughout the Okanagan Valley brought their grain to be ground into flour, with up to a dozen camps at a time being set up on the creek waiting their turn at the mill.
The demise of the mill indicates the rapidly-developing food supply networks being developed throughout the province. Brent sold the property in 1893, and milling operations ceased, a result of cheaper flour being available from the steam-driven mills at New Westminster. The grist mill was later adapted for use as a dairy barn, and another dairy barn structure was added to the site circa 1912. Although the milling operation was dismantled, Brent's portable mill, with its imported millstones, survives and is displayed at the Kelowna Museum.
Additionally, Brent's Grist Mill site is of value for its association with Frederick Brent (1827-1919), one of the earliest European settlers in the Kelowna area. He acquired his land, over 800 hectares, in 1870, and Peon Creek was renamed Mill Creek after his milling operation. Brent was well-known for his hospitality and for hosting the annual 'Bachelor Ball' at his house. He was appointed as a Justice of the Peace in 1872, and raised a family of six children; some of his descendants are still located throughout the Kelowna area.
The grist mill and house are rare surviving structures from the 1870s, when there was a recession throughout the province and little construction occurred. As such, they are a valuable representation of the building practices of pioneer times. The grist mill was built of hand-hewn pine logs for the posts and beams, joined with pegged mortise and tenon joints. The siding is whip-sawn lumber, attached with forged square nails. The large one-and-one-half-storey house was built in 1871 of large squared logs. The site was acquired by John Dilworth in 1900, and prior to 1908 he installed milled siding on the house and added plaster walls on the inside, indicating the pattern of improvements made to pioneer houses as the settlers prospered and more refined materials and techniques became locally available.
The preservation of Brent's Grist Mill reflects the community's commitment to conserving and interpreting their built heritage.

I'm laying here, drinking a glass of white wine and working on my photography.
Got to love the weekends. I get to relax all day and catch up on processing old shots. Caught up on a few days worth of shooting. I'm still a few months behind, but I'm making an effort in getting up to date.
Today I made my first eBay purchase. I've been avoiding eBay for over 6 years now; don't ask why. Some camera equipment are just too expensive for what you get retail. Ebay is just so much cheaper for these things.
So I got a remote trigger for my camera so that it's easier to shoot while my camera is on a tripod. I also got a cheap diffuser for my new flash to soften shadows more.
I'm starting to obsess over these 'product' shots. I just love the bright backgrounds and the low key shots. Maybe tomorrow I'll try a low key with my flash.
Note to self: don't get bristol board wet or it will ruin the board....oops guess I'll have to use the one in this shot as a reflector...

Hockey
In Canada, everyone plays hockey; everyone. It took about 5 stores for me to find a decent pair of figure skates because all they had was hockey skates. And those hockey-playing girls are tough cookies (as are most women in Alberta). In Sylvan Lake, Alberta, the lake freezes solid in the winter and becomes the town's giant skating rink. It is so frozen, there is confidence in driving one's Dodge truck across the lake! I was astonished at how many people owned expensive snow mobiles, hockey gear, ice-fishing equipment, etc. Winter sports in Alberta is not a mere hobby.
The guys played so much hockey during the month I was there. Here, James Howes, Jonny Nash and Josh Ferguson pause for a "breather" at the goal. The ice wasn't in very good shape; the guys had to snowplow the rink, and even doing so, they played in a very small space. There were patched of frozen grass sticking up through the snow. I attempted to figure skate for a while, but it was so cold that I could hardly stand to take off my glove long enough to press the shutter. I ended up sitting in the car in no time at all.
SALMON GLACIER (CANADA – BRITISH COLUMBIA – STEWART)
The Salmon Glacier is one of the biggest glaciers of North America.
This glacier ?n Western British Columbia descends 1.320 m. from the mountains to be reborn as the Salmon River, well-known as the place where many bears gather to fish for salmons.
The only way to approach by car this imposing phenomenon is through the Alaskan territory of the United States.
From the small Canadian town of Stewart somebody enters to the USA in the small village of Hyder, from where a dust mountain road, passing by many old gold mines, leads after 40 km to the glacier.
If you are lucky, and the atmosphere is clear, the view from the top is really breathtaking.
PS :
a) The odd thing is that from this area of Canada, somebody enters the USA territory without any passport and custom control, as there is only a Canadian check point but not a USA one. The reason is that the whole area is completely isolated, as surrounded by very high snowy mountains.

Monarch and Milkweed
One of nature's most perfect relationships
Every spring the monarch butterfly migrates thousands of miles in search of the ideal milkweed plant. Monarch's Cave cliff dwellings
You can approach the Monarch Cave ruins from either side of the canyon. I chose to visit the ruins in a counter clockwise manner, heading first up to my right to the approach from the north.
The hike to Monarch's Cave ruins, is a short, easy, shaded, beautiful hike just a half mile north of the Procession Panel hike on Comb Ridge, from the Butler Wash side.
The dwellings have been damaged but the the pictographs (the only petroglyphs I saw, were oddly enough on the floor of the cave ledge), were in good shape. The setting is the hallmark of this place with a deep cenote pool of water under the cliff ledge below the ruins.
It is not difficult to imagine the voices of early Native Americans echoing off the surrounding canyon walls and the rythmic grinding of corn with pestle and mortar be conducted as a community activity.
Though the shortest and easiest hike I would take, it was one of the most rewarding. I was the only person visiting the site this afternoon, so I could sit, ponder, enjoy, and relax with no distractions.
I took the counter clockwise circular route through the ruins that requires a quick short traverse of a narrow ledge. I smiled, when I saw that the ancients thought about exposure cowards like me, and had pecked in a line of deep comforting "footsteps" to place my feet as I crossed the short narrow ledge section. Nice work guys!
The pictographs were on the walls and on the ceilings of the site and red hematite hand prints were predominate. The hand pictographs had "non-painted" holes in the palm, much like the hand pictographs my wife and I had seen along the San Rafael Swell (Dragon and Petroglyph canyon hikes), a month earlier.
As you enter the ruins from the north along the short narrow ledge, you pass through what appears to be an "entry gate", which only allows one person to pass through to the cave at once. On the wall on the right as you pass into the ruins area through this gate opening, scratched on the wall you will see:
Monarch's Cave - 1892. I.A.E. is carved in the same hand right above this. This is the work of an "odd" Easterner's expedition that were the first to visit many sites in the Comb Ridge area for the first time. It was the Illustrated Exploring Expedition of 1892. I had not heard of it before, but when I saw the inscription I couldn't wait to get back home and start reading up about it (part of the fun of a road trip).With the intials IAE, they must have called themselves the Illustrated Archaelogical Expedition or some such (i.e. Illustrated American Expedition).
So the name for Monarch's Cave ruins goes back at least as far as 1892. Members of that expedition concluded that the buildings in this cave were built as a defensive fortification with the walls, holes for firing arrows to anybody approaching from below and the rounded rim wall structures to give a complete view and "arrow coverage" to the canyon floor below.
Whatever the history, this a very rewarding hike and one not to be rushed to be enjoyed. I was fortunate to visit this place when the globemallows were in full blossom..

May 12th through May 19th - - I traveled 9 states in 8 days, camping, driving back roads, visiting scenic and historic sites, and taking some great day hikes. These are some of the photographs from this solo "road trip".
Day One: Home in Eastern Washington; Mountain Home, Idaho; Owyhee, Nevada and a very cold night camped at Wild Horse Crossing south of Mountain City, Nevada.
Day two: NEVADA - - Mountain City; Elko; Wells; Ely (through a snow storm); Panaca. UTAH - - Enterprise, Veyo, to a warm and scenic enjoyable camp and hiking at Snow Canyon.
Day three: UTAH - - Snow Canyon; St. George; Hurricane; to Fredonia, Arizona. Forest Service Road #22 and many others to places like Monument Point and Indian Hollow. Too cold to camp (got down to 19 degrees that night), so dropped down low to BLM wilderness land off 89 A and spent the night among sagebrush and juniper with curious mule deer as "neighbors".
Day four: Opening day of the North Rim of Grand Canyon National Park. Visited the park and arriving early had many places (Cape Royal), entirely to myself. ARIZONA: Vermillion Cliffs; Page; Kaibito; and Navajo National Monument and Betatakin, where I had my nicest camp site (Canyon View at Betatakin).
Day five: Betatakin camp to Kayenta; Monument Valley to drive the 17 mile "loop road" through the monument; to Mexican Hat to recharge my camera battery (Canon G10) while eating Navajo stew and fry bread at a cafe along the San Juan River; to Comb Ridge where I took two short enjoyable "rock art and cliff dwelling" hikes (procession panel and Monarch Cave ruins; up to Blanding, Utah where I checked into a small motel for two nights.
Day six: Get up early and hike a bit over 14 miles down Kane Gulch; down Grand Gulch to Todie Canyon, with many side excursion

rational circles
This image consists only of circles rendered at about 1 pixel thick, of varying intensity. As in the "line thicket" image earlier in the photo stream, the ellipsoidal dark areas emerge only due to a lack of arcs drawn in those regions. Because the circles are restricted to the set of "rational" circles they tend to avoid certain areas and also tend to intersect at certain other locations, giving rise to the background pattern of light and dark. (Also in this image the circles are drawn white on a black background as opposed to dark on white.)
Mathematical information: These are rational circles in the following way. A circle can be represented as a 4-tupple of numbers, say {a, b, c, d}, where a point (x,y) is on the circle if a*(x^2 + y^2) + b*x + c*y + d equals 0. For the rational circles the numbers a,b,c,d are integers. The subset of rational circles drawn above have a^2 + b^2 + c^2 <= 9, and d equal to any integer. The area shown in the image is the unit square. (I call them "rational" because a rational number is a ratio of integers and the density of these rational circles in the space of all circles resembles that of the density of rational numbers in the space of all (real) numbers.)

"Yesterday , December 12, 2008, was the Feast Day of Our Lady of Guadalupe; or in Mexico where her image is most venerated, La Virgen de Guadalupe - Mother of All Mexico. She is also known as the Queen or the Empress of The Americas.
Yesterday I felt compelled to create a new interpretation, in oils, inspired by the earliest image (from the 16th century ) known - compelled by my deep Christian Faith and devotion to the Blessed Virgin Mary & her Son, Jesus Christ; together with the abiding affection I have for the Americas; to which I feel drawn to complete my destiny. I paint from my heart & soul with many prayers and as ever thank God..."
The remarkable and enlightening story surrounding this holy image of our Blessed Mother begins on December 9, 1531, as a 57-year old Aztec Juan Diego was walking to daily Mass. As he walked by Tepeyac Hill, he heard the sound of exquisite choirs; and when the music stopped, he heard the sweetest of voices beckoning to him. There stood a beautiful young Mexican woman, looking like an Aztec princess. Dressed in a scarlet gown, her head and shoulders hung with a jade-coloured cloak, she could be seen standing on a crescent moon, supported above the ground by a tiny angel.
After expressing her love and telling him who she was, she asked that Juan Diego go to the bishop and request that a chapel be built on the hill for the Mexican natives, for whom she expressed deep love.
Intially dismissed by the bishop on his first meeting, he was then asked by the bishop to bring proof that he had indeed seen the Mother of God.
The next day before he could go to see the Virgin, Juan Diego was distressed to find his one surviving relative, an uncle, seriously ill. As he rushed to find a priest to go to his dying uncle, his path was intercepted by the Blessed Mother - who assured him that his uncle would recover. She then asked him to gather roses, growing on the mountainside, despite winter; before she arranged them in his tilma (shirt) - instructing him not to open his tied shirt until he reached the bishop.
Once with the bishop and releasing the gathered flowers , he saw that the bishop looked past the flowers, tears streaming down his face and sunk to his knees... there, where the flowers had been pressed against his shirt, the Blessed Virgin had left an image of herself- exactly as he had seen her- surrounded by rays of the sun.
On his return home, Juan Diego found his sick uncle completely recovered - and learnt that the Madonna had appeared to him as well.
December 9th is the Feast Day of Saint Juan Diego - who was blessed with these apparitions of the Blessed Virgin Mary, in Mexico.
The chapel that the Virgin requested was quickly built; and today an average of 1,500 pilgrims visit the new Basilica of Our Lady of Gadalupe (built in the 1970s) in Mexico City - to kneel before the miraculous tilma (shirt)- on which the image has been perfectly sustained for 477 years.
His Holiness Pope John Paul II (1920-2005) visited the Basilica in 1979, 1999 and 2002.

Taken on January 21, 2008, this is a close-up of the portrait hanging above the water fountain of Stephen Colbert, a popular comedian who was born in Washington, D.C. (which is where the National Portrait Gallery, where this picture hangs, is located). The image is a digital image printed on canvas, but it seems Mr. Colbert didn't do a great job printing it... If you view the full-size image, you'll see some blurring/pixelation (in addition to the noise from my camera).

Based on the King Of Horror's 1986 Best Seller, "It" is a jittery, jolting excursion into personal fear. "It" raises goosebumps-and brings out the stars. Harry Anderson, Dennis Christopher, Annette O'Toole, Tim Reid, John Ritter, Tim Curry and Richard Thomas star in this thriller about a malevolent force in a small New England town.
Is there anything scarier than clowns? Of course not. And who knows scary better than Stephen King? You see where we're going. It puts a malevolent clown (given demented life by a powdered, red-nosed Tim Curry) front and center, as King's fat novel gets the TV-movie treatment. Even at three hours plus, the action is condensed, but an engaging Stand by Me vibe prevails for much of the running time. The seven main characters, as adolescents, conquered a force of pure evil in their Maine hometown. Now, the cackling Pennywise is back, and they must come home to fight him--or, should we say, It--again. Admitting the TV-movie trappings and sometimes hysterical performances, this is a genuinely gripping thriller. As so often with King, the basic idea (the bond formed during a childhood trauma) is clean and powerful, a lifeline anchored in reality that leads us to the supernatural. --Robert Horton
