Yuko and I had lots of fun picking black berries at Burnaby Lake.
I made jam and ice cream with the berries.
Too bad that Yuko couldn't taste it, I think this was my No.1 ice cream I made this year !
Recipe:
1) Cook blackberries, lemon juice and maple syrup (or sugar) in a sauce pan over medium heat (just like making jam).
2) Remove from heat and cool to room temperature, put it in the blender with 1 cup of milk.
3) Whip 1 1/2 cup whipped cream with sugar until stiff peaks are just about to form.
4) Add 2) into whipped cream and mix gently, pour the mixture in container and freeze.
5) In about an hour when it starts to freeze near the edges, remove from freezer and stir well, place it back into the freezer.
6) Repeat 5) for one or two more times (this part is important to make smooth & creamy ice ream without an ice cream maker).
