So I had a great day at work. The luncheon went great and so did the meeting with my RM. I always get nervous when my RM is coming for his monthly visit because I am worried he will find something I did wrong. The truth is.. He never does! I am very efficient in what I do! I can say that I am proud!

The lunch at the luncheon inspired me today to make a healthy dinner tonight. I don’t always cook UN-healthy but I wanted as little carbs as possible!

Here I have:

3 Chicken Breasts diced into 1 inch cubes
? Red onion thinly sliced
2 small cloves of garlic {minced}
Sauteed in EVOO, salt & pepper, until the onions have nearly melted

Then threw in a hand full of large regular mushrooms sliced as well, until those became soft as well.

When that was all cooked, I then threw in thinly sliced green and red bell peppers and a hand full of fresh broccoli. I added a little bit of butter and garlic flake salt for extra flavor!

I said to my self “Yum-O, it looks great”, I served a plate, ran upstairs to my office and used my “Hand Made” mini studio to take this shot! Ruben was on the computer and said he was going to get dinner and then go to his room and watch TV! That was nothing out of the norm. After taking the pics I wanted to eat it and went down stairs to get a fork!

Whaddaya know… Ruben has served his own bowl of the healthy delicious meal and was “trying” to jam back upstairs all fast for some reason… Yeah.. That kid had the whole top of his bowl filled with HOT CHEETOES & CHILLI FRITOS!! Those are purely snacks and he not allowed to eat snacks without asking first!!! I said he needed to eat EVERY SINGLE VEGGIE ON HIS PLATE!!! He said.. Good cause I like all those veggies! HAHA!!

Oh and yeah.. He has no more chips as they are all in the trash.. Little sneaker!! That’s what he gets for trying to sneak by me!! TOTAL MOM POWER!!























Fourteen Penn State undergraduates in the School of Hospitality Management met their sixth grade sous chefs for their first Cooking with Kids class. The free six-week course will expose the kids to cooking techniques, nutrition and healthy eating suggestions, each lesson centered around a theme -- snacks, breakfast, lunch, dinner, deserts and a finale, when students will serve a family meal. Kids were each given a chef's hat, apron, spatula and a lesson booklet with recipes for each item they will prepare.
