In the forward they explain the rationale behind the recipes. They avoid heavily processed foods, stimulants and spices that irritate the bowels. So there are no meat analogs in the recipes, no tea, coffee or chocolate, no vinegar, and no mustard, pepper, cinnamon or nutmeg, They claim that vinegar and other fermented products "inhibit digestion and cause the food to putrefy in the body". This directly contradicts current thinking of the benefits of fruit vinegars. Similarly there are many references to nutmeg soothing digestive system that doesn't "cause cravings for more stimulating foods"
Its interesting that the spices selected are quite different from those avoided by Buddhists because of stimulation. The Milams include garlic powder, onion, cumin and cayenne in their recipes. Avoiding the fermentation in soy sauce leads to quite a bizarre substitution ; 1/4 cup water mixed with 3 tbsp yeast which is not likely to taste anything like soy sauce and if kept warm with start to ferment quite rapidly...!
